Time 50m

Number Of Ingredients 5

2 tbsp rapeseed oil
8 vegetarian sausages
4 medium eggs
325ml semi skimmed milk
250g plain flour

Steps:

  • To make the batter, beat the eggs and milk together in a bowl, add 1 tsp salt, then beat again and leave to stand for 30 mins. Tip in the plain flour and beat well with a whisk until smooth. If you can, make this 2 hrs before needed and allow to stand before pouring into the tin.
  • Heat oven to 220C/200C fan/gas 7. Pour 2 tbsp oil in a 28 x 23cm roasting tin (or a tin roughly that size), coat the sausages in the oil and roast them in the oven for about 8-10 mins.
  • Stir the batter, then remove the tin from the oven and pour the batter over the hot oil and sausages (you can do this over a low heat on the hob to keep the oil nice and hot). Put the tin back in the oven and cook for 10 mins, then turn the temperature down to 180C/160C fan/gas 4 and cook for a further 25-30 mins or until the batter is cooked through.
  • Test with a knife in the centre to check it's cooked. Serve with our crunchy polenta roast potatoes, caramelised carrots and veggie gravy, if you like, plus some green vegetables.

TOAD IN THE HOLE

Toad in the Hole image

I had sausages that needed using so I made this and froze it, it was my first time making toad in the hole and it is easily adapted to gluten free by using gf flour and a tsp xanthum gum. This was really tasty and very simple, although i would recomend messing around a bit with the batter to get it right, my aunty did that part for me so i am unsur eof the exact quantities. i am also a little unsure of the temperatures as i got it out of a aga cookbook as i have an aga, but i happen to know that the aga is at 180 degrees c if that helps

TOAD IN THE HOLE

Toad in the Hole image

You know that something with a name like this is going to be good and this truly is! The traditional recipe itself is very simple but the method for making it is not, so I developed this "cold oven cheater method" which is much safer and easier. The end result is an amazing flavor and texture combination of fatty sausage links, crispy, puffed, and tender Yorkshire pudding, and delicious onion gravy. And the gravy is so good you'll want to eat it on just about anything (and everything!)

Provided by Chef John

Time 1h55m

Yield 4

Number Of Ingredients 19

4 large eggs
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pinches cayenne pepper
1 cup all-purpose flour
1 tablespoon all-purpose flour
¾ cup whole milk
¼ cup cold water
¼ cup vegetable oil
4 links pork sausage
2 tablespoons butter
1 large red onion, minced
kosher salt to taste
3 tablespoons all-purpose flour
2 cups chicken broth
¼ teaspoon Worcestershire sauce
1 teaspoon balsamic vinegar
2 tablespoons Onions, spring or scallions (includes tops and bulb), raw
1 teaspoon chopped fresh chives, or to taste

Steps:

  • Prepare batter: Combine eggs, salt, pepper, cayenne, 1 cup plus 1 tablespoon flour, and milk in a large bowl; whisk thoroughly until batter is very smooth and no lumps remain. Whisk in water. Cover and let rest at room temperature for 1 hour.
  • Prepare sausages: Heat vegetable oil in a skillet over medium-high heat. Add sausages and cook until browned, 2 to 3 minutes per side. Remove from the heat and transfer to a buttered 9x12- or 9x13-inch baking dish. Pour oil from the skillet over the sausages; brush oil with a pastry brush all over the bottom and up the sides of the dish.
  • Start onion gravy: Melt butter in the same skillet over medium-high heat. Add onion and salt; saute until soft and starting to brown, 5 to 6 minutes.
  • While onion is cooking, pour batter in and around the sausages. Place in the center of a cold oven and turn temperature to 500 degrees F (260 degrees C). Set oven timer for 30 minutes.
  • While toad in the hole cooks, finish onion gravy: Stir in flour and cook for about 2 minutes. Whisk in chicken broth and return to a simmer. Add Worcestershire sauce and balsamic vinegar and simmer until gravy thickens up and reduces, about 5 minutes. Reduce heat to low and stir in green onions. Taste and adjust seasoning.
  • When timer goes off, remove toad in the hole from the oven; it should be browned and puffed. Spoon gravy over the sausages and garnish with green onions and chives.
  • Serve with extra gravy.

  • Place sausage in casserole dish (if not already there) and add batter.
  • Bake for about 30 minutes or until bread rises.

TOAD IN THE HOLE

Toad in the Hole image

I know this is not really toad in the hole, but thats what my dad always called it. This is one of our favorite breakfasts, but we eat it for supper too. You can use any potted meat but my family likes deviled ham. Be really careful to let this cool for at least five minutes or it will burn the roof of your mouth really badly. Another hint, use the little bit of potted meat left in your breakfast gravy to spoon over the top. This is really rich.

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 4

1 cup all-purpose flour (I used self-raising flour)
2 eggs
1 cup whole milk
1 pinch black pepper

Steps:

  • Method:
  • 1.
  • To make the batter in a blender, combine the flour, eggs, milk, salt and a few grindings of pepper in the blender jar, and blend at high speed for 2 to 3 seconds. Turn off the machine, scrape down the sides of the jar, and blend again for 40 seconds.
  • 2.
  • (To make the batter by hand, beat the eggs and salt with a whisk or a rotary or electric beater until frothy. Slowly add the flour, beating constantly. Then pour in the milk in a thin stream and beat until the mixture is smooth and creamy). Refrigerate the batter for at least 1 hour.
  • Once the batter is set preheat the oven, 200 degrees.
  • Now add a drizzle of oil into a baking tray lay the sausages in the tray. Next slowly poor the batter over the sausages making sure you cover 2/3 of the sausages in batter.
  • Next place the baking tray into the oven for 30 minutes. Once the batter is brown and you can see that the sausages are cooked. Remove baking tray from the oven and serve immediately.

Tips:

  • Choose the right bread: A thick, sturdy bread like sourdough or whole wheat will hold up better to the batter and prevent it from getting soggy.
  • Don't overcrowd the pan: Leave enough space between the toad in the holes so that they have room to cook evenly.
  • Cook over medium heat: This will help to prevent the batter from burning and ensure that the toad in the holes are cooked through.
  • Flip the toad in the holes halfway through cooking: This will help them to cook evenly on both sides.
  • Serve with your favorite toppings: Some popular options include butter, vegemite, cheese, and eggs.

Conclusion:

Toad in the hole is a classic British dish that is easy to make and can be enjoyed by people of all ages. With its crispy bread and savory filling, it's a perfect meal for a quick and easy breakfast, lunch, or dinner. So next time you're looking for a simple and satisfying meal, give toad in the hole a try!
