EASY VEGETARIAN/VEGAN BLACK BEAN SOUP

Easy Vegetarian/Vegan Black Bean Soup image

Hearty, yummy, and healthy! This is a really easy soup to make, it cooks really fast without many steps, and is very rich with black beans. Some fresh cilantro would make a nice replacement to the coriander but I usually don't have it on hand, so I used dry spices for everything but it came out great. I like my soups with a tad of salt, but you can omit the salt if you're watching your sodium intake or lower it/replace with something like SaltSense. It's very pleasant and mild, though you could probably put some Bayou Blast or red cayenne in the spice mixture if you want it hotter. Yields about 2-3 small servings.

KEMP'S VEGETARIAN BLACK BEAN SOUP WITH SHERRY & LIME

Kemp's Vegetarian Black Bean Soup With Sherry & Lime image

Entered for safe-keeping, adapted from Gourmet Executive Food Editor Kemp Minifie in April 2007 Gourmet. Kemp is speaking my language with these ingredients! I swear the shot of Cream Sherry added to my Black Bean Soup at El Tio Pepe's launched an endless search for the perfect Black Bean Soup. This recipe calls for dried black beans cooked according to Recipe #512333. Corn bread goes well with this, and so does a beer or a margarita. (Please don't mark down this recipe if you don't use Recipe#512333; it's integral to the taste.) I have not included the preparation time for Recipe#512333 in this recipe's times.

EASY VEGETARIAN BLACK BEAN TORTILLA SOUP

Easy Vegetarian Black Bean Tortilla Soup image

Quick, hearty soup with a bit of a kick. Can be made Vegan by omitting sour cream. Tame the spice down by substituting diced tomatoes for the Ro-Tel. I serve the soup with corn chips, but tri-colored tortilla strips add some visual appeal. I like to leave the black beans whole, but you can make it creamy by mashing the beans.

Categories     Soup/Stew     Bean     Vegetable     Low Fat     Vegetarian     Kid-Friendly     Quick & Easy     Wheat/Gluten-Free     Halloween     Vegan     Simmer

Yield about 10 cups

Number Of Ingredients 15

Two or three cans black beans (about 4 1/2 cups), rinsed and drained
1 large can Muir Glen fire roasted chopped tomatoes
1 large chopped vidalia or other sweet onion
1/2 cup minced shallot or leeks
heaping Tbsp chopped garlic
1 sm can chopped green chiles or 1/8 cup fresh, choose heat according to your taste.
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups 'no chicken' or veggie broth - about half of a box
2 or 3 cans organic pumpkin, no additives
sm amount of olive oil, spray coating, or butter to coat pan
3 tablespoons champagne or other wine vinegar
1/2 cup dry Sherry
Offer sour cream or non-dairy substitute, and shelled, toasted pumpkin seeds (not the ones in shell that are white, but the little brown ones), and hot sauce on table. Note: shelled pumpkin seeds or "pepitos" can be hard to find and are not necessary to enjoy the soup!

Steps:

  • Use small amount of olive oil or other method to coat a 6-quart heavy kettle. Cook onion, shallot, garlic, chili powder, chiles, salt, and pepper over medium heat, stirring, until onion begins to caramelize. While that is cooking, rinse beans and place in large bowl with tomato and its liquid. Add cooked onion mixture to bowl. Use handheld blender to pureé mixture in bowl. Transfer pureé back into soup pot. Stir in broth, pumpkin, and Sherry vinegar until combined. Simmer, uncovered, stirring occasionally. After simmering 15 minutes, add sherry. Simmer another 10 minutes, or until thick enough to coat the back of a spoon. Can adjust thickness with more broth, more pumpkin, or more pureed beans but will need to simmer longer if adding ingredients. Season soup with salt and pepper. Offer sour cream or non-dairy substitute, toasted pumpkin seeds, hot sauce, salt and pepper.

BLACK BEAN SOUP, VEGETARIAN

Black Bean Soup, Vegetarian image

this is a lighter soup, from cooking light, and i do like to garnish it with baked tortilla strips and crema.

Provided by chia2160

Categories     Black Beans

Time 45m

Yield 6 serving(s)

Number Of Ingredients 16

1 tablespoon olive oil
1/2 cup diced celery
1/2 cup minced onion
1/4 cup diced green bell pepper
3 tablespoons chopped carrots
1 tablespoon minced garlic
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon chili powder
1/4 teaspoon fresh ground black pepper
2 cups vegetable broth
1 cup water
3 (15 ounce) cans black beans, rinsed and drained
sliced green onion (optional)
corn tortilla strips (to garnish) (optional) or chips (to garnish) (optional)
crema (to garnish) (optional)

Steps:

  • Heat oil in a large saucepan over medium heat.
  • Add celery, minced onion, bell pepper, and carrot. Cook 10 minutes or until tender, stirring occasionally. Add garlic and the next 4 ingredients (through black pepper); sauté 3 minutes.
  • Add broth, water, and beans; bring to a boil. Reduce heat, and simmer 15 minutes. Cool slightly.
  • Place half of soup in a blender, and process until smooth. Pour into a bowl. Repeat procedure with remaining soup. Garnish with sliced green onions, if desired.

Tips:

  • Use dried black beans for the best flavor and texture. If you're using canned beans, rinse and drain them well before using.
  • Soak the black beans overnight before cooking to reduce the cooking time. If you're short on time, you can quick-soak the beans by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Add aromatics like onion, garlic, and cumin to the soup to enhance the flavor.
  • Use vegetable broth instead of water for a more flavorful soup.
  • Add chopped vegetables like carrots, celery, and bell peppers to the soup for extra nutrition and flavor.
  • Season the soup to taste with salt, pepper, and chili powder.
  • Serve the soup with a dollop of sour cream, shredded cheese, or chopped cilantro.

Conclusion:

Black bean soup is a delicious, healthy, and versatile soup that can be enjoyed by people of all ages. It's a great way to use up leftover black beans, and it's also a great option for a quick and easy weeknight meal. With its smoky flavor and hearty texture, black bean soup is a surefire hit.
