Tips:

  • Choose ripe fennel bulbs: Look for fennel bulbs that are firm and have a bright white or light green color. Avoid bulbs that are bruised or have brown spots.
  • Trim the fennel properly: Cut off the tough outer leaves and the feathery tops of the fennel bulb. Then, slice the bulb in half lengthwise and remove the core.
  • Use a good quality vegetable broth: The vegetable broth you use will have a big impact on the flavor of the soup. Choose a broth that is flavorful and has a rich umami taste.
  • Don't overcook the fennel: Fennel is a delicate vegetable that can easily become overcooked. Cook it just until it is tender-crisp, about 10 minutes.
  • Season the soup to taste: Once the soup is finished cooking, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.

Conclusion:

This vegetarian cream of fennel soup is a delicious and easy-to-make soup that is perfect for a light lunch or dinner. It is also a great way to use up leftover fennel. The soup is creamy and flavorful, with a slightly sweet and anise-like taste. It is also a good source of vitamins and minerals, including vitamin C, potassium, and fiber.
