3 slices bacon, diced
2 cups diced potatoes
1/4 cup chopped onion
1 (8 ounce) bottle clam juice
2 (6 1/2 ounce) cans minced clams
2 cups heavy cream

Steps:

  • In a 3 quart saucepan, brown bacon over medium heat (do not drain drippings).
  • Add potato and onion and saute for about 7 minutes.

Tips:

  • Use fresh clams. Fresh clams will give your chowder the best flavor. If you can't find fresh clams, you can use frozen clams, but be sure to thaw them before using.
  • Soak the clams in cold water for 30 minutes before cooking. This will help to remove any grit or sand from the clams.
  • Use a good quality clam broth. The clam broth is the base of your chowder, so it's important to use a good quality broth. Look for a broth that is made with fresh clams and has a rich flavor.
  • Don't overcook the clams. Clams are delicate and can easily be overcooked. Cook them just until they are opaque and tender.
  • Add the vegetables and seasonings to the chowder in stages. This will help to prevent the vegetables from becoming overcooked.
  • Serve the chowder hot with oyster crackers or crusty bread.
