2 teaspoons chili powder
1 14ounce can Mexican style stewed tomatoes (pureed)
1 cup frozen corn kernels
1/4 cup sliced black olives

1 tube polenta
1/2 cup crumbled queso fresco cheese (optional)

Steps:

  • First make the vegetarian ground beef: Bring the broth to boil in a 3 quart saucepan.

  • Chop polenta and scatter over top of casserole. Sprinkle with queso fresco cheese if desired.
  • Bake for 30 minutes or until bubbly. Let stand 5 minutes before serving.
  • Serve as is or with salsa and chopped avocado.

Tips:

  • Use fresh ingredients whenever possible. This will give your tamale pie the best flavor.
  • Don't be afraid to experiment with different fillings. You can use any type of vegetables, beans, or meat that you like.
  • Make sure to cook the cornbread batter completely. Otherwise, it will be too soft and won't hold its shape.
  • Serve the tamale pie with your favorite toppings. Some popular options include salsa, guacamole, sour cream, and cheese.

Conclusion:

Tamale pie is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover vegetables and beans, and it can be easily customized to your liking. So next time you're looking for a hearty and satisfying meal, give tamale pie a try.
