You will never want to eat frozen veggie burgers again. These are so easy, and you'll be proud to have created such a vegetarian delight.

1 (16 ounce) can black beans, drained and rinsed
½ green bell pepper, cut into 2 inch pieces
½ onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

19 ounces black beans
1/3 cup onion, coarsely chopped
1 garlic clove, minced
1 egg
3 tablespoons barbecue sauce or 3 tablespoons ketchup
1 tablespoon soya sauce or 1 1/2 teaspoons HP steak sauce
1 teaspoon canola oil
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/3 cup all-purpose flour
1/2 cup dry breadcrumbs (must be store bought to work) or 1/2 cup cracker crumb, ground in processor until very fine (must be store bought to work)
1/2 cup old cheddar cheese, shredded
6 crusty bread rolls

Steps:

  • Drain and rinse beans with cold water.
  • Drain again and pat dry with paper towels.
  • Add beans, onions, garlic, egg, 2 tbsp barbecue sauce, Worcestershire sauce, oil, salt and pepper to food processor.
  • Pulse until beans are the size of peas.
  • Place pulsed mixture into a large bowl.
  • Add flour and stir until evenly mixed.
  • Add bread crumbs and mix well.
  • Add cheese and mix with your hands (mixture is thick).
  • Divide mixture into six portions.
  • Flour your hands and shape into 1/2-inch thick burgers (if you don't flour your hands the mixture will stick to them).
  • The burgers may be refrigerated in a sealed container for 1 day or frozen until ready to grill.
  • Oil your grill and preheat grill to medium-high.
  • Place burgers on grill.
  • Brush with remaining barbecue sauce.
  • Barbecue with lid down until hot, turning once, for 8 to 10 minutes.
  • Serve on buns with desired toppings i.e. pickles, onions, tomatoes, salsa.
  • For vegetarian make sure you use either a vegetarian Worcestershire sauce or the soy sauce.

1 (98 g) green bell peppers, cut into large pieces
1 (118 g) onions, cut into large pieces
3 garlic cloves, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 1/2 teaspoons hot sauce
1/2-1 cup breadcrumbs
1/4 cup parmesan cheese
4 Oroweat Multi-Grain Sandwich Thins
4 slices red onions, to serve
mustard

Steps:

  • In a small bowl, combine the egg, chili powder, cumin and chili sauce.
  • In a food processor, pulse bell pepper, onion, and garlic until finely chopped. If needed, strain to remove excess water.
  • Add beans and egg mixture, pulse until combined. Transfer to a bowl.
  • Work in bread crumbs and parmesan until mixture is sticky and holds together, adding more bread crumbs if needed.

  • In a large bowl, microwave black beans for 1 minute, or until softened.

1 tablespoon soy sauce
1 ½ cups all-purpose flour

Steps:

  • Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes, until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, cheese, and egg. Stir in soy sauce, transfer the mixture to a bowl, and refrigerate 1 hour.
  • Preheat the grill for high heat.
  • Place the flour on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the flour, lightly coating both sides.

I tried to recreate the veggie burgers that McMaster University's Bridges Cafe serves, and I think I've pretty much got it with this recipe.

1 1/3 cups textured vegetable protein (dehydrated soy)
1 cup boiling water
2 tablespoons ketchup
Worcestershire sauce
soy sauce
1/2 teaspoon salt
1/2 teaspoon marjoram
1 teaspoon oregano
1 tablespoon parsley flakes
1/4 cup grated carrot
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
3 finely chopped garlic cloves
1/2 cup chopped fresh basil
1/3 cup flour

Steps:

  • Stir TVP into boiling water in a medium mixing bowl.
  • Add ketchup, Worcestershire, soy (appx. 2 tsp), salt, herbs and spices.
  • Let stand 10 minutes.
  • Heat carrots, celery, onion, garlic and basic in a little oil in a skillet, until JUST softened.
  • Mix veggies into TVP mixture, slowly adding flour until the mixture holds its own shape (like a mix between dough and ground beef).
  • Shape into 6 patties (1/2 inch think or so).
  • Cook in frying pan in a bit of oil until both sides are hardened up and darkened.
  • I've tried adding chili powder to the oil in the pan before cooking the patties, and it adds nice flavour.
  • Also, when shaping the final mixture, it really helps to wet your hands with a bit of water to prevent it sticking.

This is a recipe I am slowly trying to clone. So far, this is the closest I've come. I'm not so sure Houston's uses an egg white, but I added one to help bind the mixture together. Also, the cheese is optional. Houston's definitely grills their buns in butter, so that's probably another reason why their burgers are so good. Steps:

  • Pulse mushrooms in a food processor until finely chopped, and transfer to a bowl. Shred zucchini, place on paper towels, and squeeze to remove excess moisture. Add to mushrooms.
  • Heat 2 tablespoons oil in a large pan over medium heat. Add shallot and red-pepper flakes, and cook until softened, about 2 minutes. Add mushrooms and zucchini, and cook until tender, about 2 minutes. Remove from heat, and add Parmesan, quinoa, and salt. Season with pepper. Let cool completely, then stir in egg and breadcrumbs. Cover, and refrigerate until cold and firm, about 1 hour.
  • Heat remaining 2 tablespoons oil in a large nonstick skillet over medium heat. Shape mixture into six 1/2-inch-thick patties, pressing firmly. Cook in batches until golden brown and cooked through, about 3 minutes per side.
  • Wipe pan clean, and return to medium heat. Brush cut sides of buns with oil, and heat buns, cut sides down, until toasted, about 1 minute. Spread yogurt-garlic sauce on cut sides of bun halves. Divide burgers, sprouts, and cucumber among bottom halves. Sandwich with top halves.

These are really filling, so we've found that slightly thinner, smaller patties are usually better, and you can fit toppings on that way. We will also sometimes add a tbsp of crushed red pepper flakes in with the cumin and chili pepper to really spice it up!

1 tablespoon olive oil
1/2 cup peeled and grated carrot

2 tablespoons Dijon mustard

Steps:

  • Saute onions and garlic in oil for about 5 minutes until the onions begin to soften.
  • Add carrots, chili powder and cumin. Cook on low heat for 5 minutes. Set aside.
  • Mash the beans in a large bowl with a potato masher or the back of a spoon, or run through a food processor.
  • Add the mustard, soy sauce, ketchup or tomato paste and the sauteed vegetables.
  • Mix in the oats.
  • Add salt and pepper to taste.

1 cup cooked brown rice

1 cup Parmesan cheese
1 egg, lightly beaten
¼ cup ground flaxseed
1 teaspoon vegetable bouillon base (such as Better Than Bouillon®)
1 dash Worcestershire sauce

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In a large bowl, microwave black beans for 1 minute, or until softened.

1/4 cup cooked white rice
3 tablespoons chopped cilantro
4 teaspoons diced jalapeño chili
1/2 teaspoon salt
1/2 teaspoon ground cumin
Nonstick vegetable oil spray
4 no-lard 9- to 10-inch-diameter flour tortillas (99% fat-free)
8 tablespoons light sour cream
8 tablespoons purchased salsa

Steps:

  • Blend 1/2 cup corn kernels and 1 tablespoon cornmeal in processor until moist clumps form. Add 3/4 cup corn kernels; process 10 seconds (reserve remaining corn for another use).
