2 skinless, boneless chicken breast halves
1 lemon
salt and pepper to taste
1 tablespoon olive oil
1 pinch dried oregano
2 sprigs fresh parsley, for garnish

Steps:

  • Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium low heat.
  • When oil is hot, put chicken in skillet. As you saute chicken, add juice from other 1/2 lemon, pepper to taste, and oregano. Saute for 5 to 10 minutes each side, or until juices run clear. Serve with parsley for garnish.

¼ lb chicken breast, diced
½ lemon lemon zest
1 teaspoon garlic, crushed
1 tablespoon soy sauce
salt, to taste
pepper, to taste
½ cup flour
2 eggs, beaten
1 cup panko breadcrumbs
2 cups oil
¼ cup chicken stock
½ lemon lemon zest
1 lemon, juiced
4 tablespoons sugar
1 tablespoon water
½ tablespoon corn flour

Steps:

  • Combine all marinade ingredients with the chicken breast and leave for 20 minutes.
  • Coat the chicken breast first in flour, then eggs, and finally panko breadcrumbs.
  • In a medium-sized saucepan heat the oil to 325˚F (170°C),
  • Deep fry the breaded chicken for about 3-4 minutes until the coating is golden brown.
  • In a small frying pan, combine the chicken stock, lemon juice, and sugar. Bring the mixture to a boil.
  • Mix the corn flour with the water, then add the mixture to the frying pan to thicken the sauce.
  • Add the chicken to the frying pan and coat with the lemon sauce.
  • Serve on top of rice. (We garnished ours with green onions and sesame seeds.)

This is my version of the seemingly infinite variety of lemon chicken recipes. It is a mixture of half a dozen different ones I have tried. I settled on this because it is seriously easy to make and very versatile. The amount of butter, flour and seasoning is really just a matter of taste. However, if you can, use organic chicken because it isn't pumped full of water and nonsense which can ruin the thick gloopy sauce. You can add whatever you like to it while it is cooking and serve it with anything. My favourite is pasta (conchiglie or penne) and mushrooms or homemade garlic potato wedges. Yummy!

2 chicken breasts
1 lemon
50 g butter
3 tablespoons flour
salt
pepper

Steps:

  • Juice the lemon.
  • Mix the flour, salt and pepper on a plate.
  • Cut the chicken into long strips.
  • Thoroughly coat the chicken in the flour mixture.
  • Melt half of the butter in a frying pan (that has a lid for later).
  • On a very high heat add the chicken to the butter and quickly brown on both sides.
  • Reduce the heat, add the rest of the butter and let it melt.
  • Add the lemon juice and cover the pan. NB If you want to add mushrooms or other veggies now is a good time.
  • The chicken will be ready in approximately 10 minutes - I stir it occasionally but that isn't necessary.
  • Serve the chicken with the lemon butter mixture as the sauce.

4 boneless, skinless chicken breast halves, sliced in half crossways (butterflied, cut all the way through)
1 teaspoon dried thyme, plus 1 small bunch fresh thyme, leaves chopped
Salt and freshly ground black pepper
4 tablespoons olive oil
1/4 cup all-purpose flour
1 red onion, thinly sliced
1/4 cup white wine, optional
1 cup chicken broth
3 lemons, juiced
1 to 2 tablespoons butter
Spinach "bed", recipe follows
1 bag pre-washed fresh spinach
3 tablespoons water
1 tablespoon butter
1 lemon, juiced
Salt and freshly ground black pepper

Steps:

  • Season chicken with dried thyme and salt and pepper. Heat a large saute pan over medium heat and add the oil. Dredge the chicken in flour, add to the hot oil and saute until cooked through. Set chicken aside to rest on plate tented with foil.
  • In same saute pan, over low heat, add onions and fresh thyme and cook until aromatic.
  • In a measuring cup, measure out wine, if using, and broth, and add the lemon juice. Turn the heat up to high, and deglaze the pan with the broth mixture until starting to reduce.
  • Remove the pan from the heat and finish the sauce by whisking in butter. Season with salt and pepper, to taste.
  • Place a bed of cooked spinach on a serving platter, top with the chicken. Spoon the sauce over the chicken and serve.
  • Spinach "bed":
  • Microwave spinach in a microwave-proof dish with a few tablespoons of water on high for 5 to 6 minutes, or until hot. Drain, and toss with butter, lemon juice, and salt and pepper, to taste.

1 large egg
1 cup all-purpose flour
1 teaspoon lemon-pepper seasoning, or to taste
4 skinless, boneless chicken breast halves
½ cup milk
⅓ stick unsalted butter
4 lemons, sliced

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whip milk and egg together in a small bowl. Mix flour and lemon-pepper seasoning together in a another small bowl.
  • Dip chicken in the egg mixture and then in the flour to coat completely. Place milk and butter in the bottom of a baking dish to keep the chicken nice and moist. Place coated chicken on top. Place lemon slices directly on the chicken. Cover with foil.
  • Bake in the preheated oven until almost cooked through, about 30 minutes. Remove foil and continue to bake until no longer pink in the centers and juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
