2 packages (11-1/2 ounces each) milk chocolate chips, divided
4 tablespoons shortening, divided
2 packages (14 ounces each) caramels
1/4 cup water
3 cups chopped walnuts

Steps:

  • Line an ungreased 9-in. square pan with foil and grease the foil with 2 teaspoons butter; set aside., In a microwave or heavy saucepan, melt one package of chips and 2 tablespoons shortening; stir until smooth. Pour into a prepared pan. Refrigerate for 20 minutes., Meanwhile, in a large heavy saucepan over medium-low heat, combine the caramels, water and remaining butter. Cook and stir until caramels are melted and mixture is smooth. Stir in walnuts. Pour over chocolate layer. 2 teaspoons butter
1/3 cup butter, cubed
2 cups sugar
2 cups heavy whipping cream, divided
1 cup light corn syrup
1-1/2 cups chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 2 teaspoons butter., In a large heavy saucepan, combine cubed butter, sugar, 1 cup cream and corn syrup. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage). Stir in remaining cream very slowly so that mixture does not stop boiling., Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook and stir until thermometer reads 245° (firm-ball stage)., Remove from heat; stir in walnuts and vanilla. Immediately pour into prepared pan (do not scrape saucepan). 1 cup walnuts
1/4 cup + 1 tablespoon golden brown sugar, both packed ((do not use dark brown))
1/4 cup water
1 tablespoon unsalted butter
1/8 teaspoon + 2 pinches salt

Steps:

  • Place a piece of parchment on a dinner plate (approximately the size of the plate) or any other heat proof plate. Set aside.
  • Place all ingredients (except two pinches salt) in a medium non-stick skillet.
  • Place skillet over high heat and cook (stirring occasionally) for 5 minutes (stirring constantly in the last minute and reduce heat to medium during the last minute), until all moisture evaporates and the nuts get darker, glossy and begins to clump together (refer pictures). It is important to make sure that all the liquid is evaporated before removing from heat.
  • Immediately transfer nuts (scraping any remaining caramel off the pan) on the prepared parchment. Spread the nuts, so that they are in a single layer and sprinkle 2 pinches salt evenly on top of nuts. Let cool to room temperature and break apart with your fingers.
  • Store nuts in a container for several days

2 cups flour
3/4 cup packed brown sugar
1 beaten egg
3/4 cup cold margarine or 3/4 cup butter
3/4 cup chopped walnuts
1 (14 ounce) bag caramels, unwrapped
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350°F.
  • Mix flour, sugar and egg.
  • Cut in ½ cup margarine until crumbly.
  • Stir in walnuts.
  • Reserve 2 cups of crumb mixture.
  • Press remaining crumb mixture firmly into a greased and floured 13x9 in pan.
  • Bake 15 minutes.
  • In a saucepan over low heat melt caramels with sweetened-condensed milk and remaining ¼ cup margarine.
  • Pour over prepared crust and top with reserved crumb mixture.

1 tablespoon honey
1 tablespoon water
1 teaspoon vegetable oil
1/4 cup granulated sugar
1/2 teaspoon salt

  • Preheat oven to 325° F .
  • Place walnuts on a baking sheet and toast 10 to 15 minutes or until golden.
  • Combine honey, water and oil in a skillet and bring to boil.

1 pound walnut halves
1 cup white sugar
2 teaspoons ground cinnamon
¼ teaspoon salt
6 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.

175g plain flour , plus extra for dusting
85g butter , cut into small cubes
50g caster sugar
1 egg yolk
200g caster sugar
100g butter , cut into small pieces
200ml whipping or double cream
200g shelled walnut half

Steps:

  • Heat oven to 190C/170C fan/gas 5. Put the flour in a food processor with the butter and sugar, and mix until it forms fine breadcrumbs. Add the egg yolk and 1-2 tbsp cold water, and pulse to make a firm dough.
  • Have ready a 24cm tart tin. Briefly knead the pastry on a lightly floured surface, then roll out to a round about 5cm larger than your tin. Lift onto the tin with the help of your rolling pin, then press into the corners using your finger. Do not trim the pastry. Fill the pastry case with a round of baking parchment and baking beans. Chill for 10 mins. Blindbake for 10 mins, remove the paper and beans, then bake for 5 mins more.
  • To make the filling, put the sugar in a large pan with 3 tbsp cold water. Heat gently, stirring to dissolve the sugar. When the sugar is completely dissolved, increase heat and bubble until the syrup has turned a rich caramel colour. Remove from the heat and stir in the butter until it has dissolved, then stir in the cream. Return to the heat and boil hard, stirring until the sauce is thick enough to leave a gap on the base of the pan when you draw your spoon across it. Stir in the walnuts.
  • Fill the pastry case with the nut mixture, levelling it with a fork. Return to the oven for 8-10 mins until the filling is bubbling. Cool for 10 mins before removing carefully from the tin. Serve warm or cold.

A pinch of cayenne pepper
2 cups toasted walnuts

Steps:

  • Lightly brush bottom and sides of a 9-by-13-inch rimmed baking sheet with oil. Line with parchment, leaving a 2-inch overhang on long sides; lightly brush parchment with oil.
  • Bring cream, sugar, butter, maple syrup, and corn syrup to a boil in a large saucepan over high heat, stirring until sugar dissolves. Reduce heat to medium-high; cook, stirring occasionally, until caramel reaches 248 degrees on a candy thermometer, about 15 minutes.
  • Immediately remove caramel from heat, and stir in salt, vanilla, cinnamon, nutmeg, cloves, cayenne pepper, and walnuts. Pour caramel onto baking sheet, and let stand, uncovered, at room temperature at least 8 hours and up to 1 day.
  • Lifting by parchment overhang, transfer caramel to a large cutting board. Cut into 3/4-by-1 1/4-inch pieces; wrap each piece in waxed paper or cellophane.
