1 tablespoon olive oil
8 cups spring mix salad greens
2 medium oranges, peeled and sectioned
1/2 cup crumbled feta cheese
DRESSING:
1/3 cup orange juice
2 tablespoons mayonnaise
1 tablespoon grated orange zest
1 tablespoon brown sugar
1 tablespoon cider vinegar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
1/8 teaspoon ground allspice

Steps:

  • Preheat oven to 400°. Scrub beets and trim tops to 1 in. Place beets on a double thickness of heavy-duty foil (about 24x12-in.); drizzle with oil. Fold foil around beets, sealing tightly. 1/3 cup pecan pieces
1 orange (or 1/4 cup plus 1 teaspoon orange juice)
