1 cup whole milk
1 1/2 cups skim milk
1 cup canned unsweetened coconut milk
1 cinnamon stick
1 vanilla bean, halved lengthwise, seeds scraped out, seeds and pod reserved or 2 teaspoons pure vanilla extract
1 teaspoon salt
1 1/4 cups uncooked jasmine rice, rinsed and drained
3/4 cup sugar
1/4 cup raisins, soaked in rum or water and drained
1 1/4 cups heavy whipping cream
1 teaspoon freshly grated lime zest
Passion fruit sorbet (optional)
Passion fruit seeds, for garnish (optional)

Steps:

  • In a large saucepan, combine three milks, cinnamon, vanilla seeds and pod, if using, and salt. Place over medium-high heat and bring to a boil. Add rice, return to a boil, stirring and scraping the pan so that the rice does not stick. Reduce heat to low and simmer, uncovered, stirring occasionally, until all liquid has been absorbed by the rice and rice is tender, 25 to 30 minutes. Do not let mixture brown.
  • Remove rice from heat and immediately stir in sugar until dissolved. Stir in raisins. Set aside and let cool completely.
  • Place cream in the bowl of an electric mixer fitted with the whisk attachment. Beat cream on medium speed until soft peaks form.
  • Fold whipped cream and lime zest into cooled rice pudding, until mixture is loose and rice kernels are separated. Divide among 6 bowls. Top each with a scoop of passion fruit sherbet and passion fruit seeds, if desired.

1/2 cup raisins
3 tablespoons Malibu rum or other coconut-flavored rum
1 1/2 cups nonfat milk
1 1/4 cups canned unsweetened coconut milk
3/4 cup whole milk
1 cinnamon stick
1/2 teaspoon salt
1/2 vanilla bean, halved lengthwise
1 1/4 cups jasmine rice
6 tablespoons plus 1/4 cup sugar
1 cup chilled whipping cream
2 1/2 teaspoons grated lime peel
6 passion fruits, halved, juice and seeds scooped into bowl

Steps:

  • Combine raisins and rum in small bowl.Let stand at room temperature while preparing pudding.
  • Combine nonfat milk and next 4 ingredients in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer; remove from heat. Allow to steep uncovered 1 hour. Strain coconut broth.
  • Rinse rice in medium bowl of cold water. Drain. Repeat 2 more times. Cook 1 cup coconut broth and rice in heavy medium saucepan over medium-high heat until almost all liquid is absorbed, stirring constantly, about 3 minutes. Add remaining coconut broth; cook over low heat until rice is tender, stirring frequently, about 13 minutes. Remove from heat. Stir in 6 tablespoons sugar (mixture will be thick). Transfer to large bowl; cool.
  • Whip cream in medium bowl until cream holds peaks. Fold half of whipped cream into cooled rice. Drain raisins. Stir raisins and lime peel into rice. Fold in remaining whipped cream. Divide mixture among eight 3/4-cup ramekins or custard cups.
  • Preheat broiler. Sprinkle 1/2 tablespoon sugar over each pudding. Place puddings on rimmed baking sheet. Broil until sugar caramelizes, watching closely to prevent burning, about 3 minutes. Spoon passion fruit over puddings.

1/2 cup sugar
5 cups organic whole milk
7 ounces medium-grain rice
2 tablespoons vanilla sugar
2 ounces store-bought meringues, crumbled

  • Rice pudding is loved by everyone, and it's one of my favorite desserts. Proper feel-good food, it's gorgeous served on its own or with whatever fruit you've got knocking around. For me, though, the best way of eating it, especially in the summer, is really cold with hot strawberry jam. As an alternative, you can broil or roast peaches and plums to serve with it. Beautiful!
  • I used to make jam with my mum when I was a kid. For a lovely fresh strawberry taste, I now use less sugar and I don't cook it for quite as long as my mum used to. Any leftover jam will keep in the fridge for a couple of weeks if you store it in a jar rinsed with boiling water, but you'll probably find it gets eaten way before that! It's great served as a sauce alongside a tart, drizzled over ice cream or simply spread on a piece of toast or fresh bread.
  • Place the strawberries in a wide, stainless steel pan and sprinkle the sugar over the top. Scrunch the strawberries up with your hands, really pushing them between your fingers to pulp them up - the mixture will start to look like jam at this point. You want all the sugar to dissolve in the strawberry juice before you put the pan on the heat and bring it to the boil. Simmer for 20 to 30 minutes on a medium heat, and every 5 minutes or so come back to your jam to skim off the foam. Don't worry if it's still a bit liquid - it needs to be so you can swirl it into your rice pudding. Remove the pan from the heat and put aside. There you have it - beautiful, quintessential strawberry jam!
  • Meanwhile, place the milk, rice and vanilla sugar in a deep saucepan. Bring to a medium simmer and put on the lid. Cook for half an hour, stirring occasionally, until the rice pudding is thick, creamy, oozy and moist. If it ends up being a bit too thick, you can thin it down by adding a little more milk.
  • To serve, divide the rice pudding between your bowls. Spoon over a big dollop of your beautiful strawberry jam, then slowly swirl it in so it marbles and ripples through the rice pudding. Sprinkle over the meringue pieces and scatter with a few wild strawberries, if you like.

2 cups cooked rice (use short grain Jasmine rice)
2 eggs, well beaten
7 tablespoons sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 1/2 cups whole milk
1/2 cup seedless raisins or 1/2 cup chopped dates
3/4 teaspoon cinnamon
1 (1/2 pint) container whole cream

Steps:

  • PREHEAT OVEN: 350F Degrees.
  • Place in saucepan 2 1/2 cups water.
  • Bring water to a boil and add 1 cup of the Jasmine Rice.
  • Reduce heat and simmer for about 20 minutes.
  • Rice should be almost dry.
  • Combine cooked rice with rest of the ingredients except for the cinnamon and whole cream.
  • Pour into a greased 1 quart casserole.
  • Sprinkle cinnamon over top of rice.
  • Bake in oven for about 40 minutes.

  • Pudding should not be dry (moisture should show in the middle of pudding).

1/4 cup jasmine tea leaves or a few drops jasmine essence
1 1/3 cups jasmine rice
1 teaspoon salt
1 tablespoon butter
1 1/2 cups sugar

Steps:

  • Heat milk in a medium saucepan until hot but not boiling. Add tea leaves or essence. Remove from heat, cover, and let steep 20 minutes. Strain milk if using tea leaves; set aside.
  • Bring 3 cups water to a boil in a medium saucepan. Stir in rice and salt, reduce heat to low, cover, and cook until rice is tender and liquid has evaporated, 15 to 20 minutes. Stir milk, butter, and 1/2 cup sugar into rice. Cover and cook over medium-low heat, stirring occasionally, until sugar is dissolved and the pudding is thick, about 30 minutes.

250g passion fruit or lemon curd
4 ripe passion fruits , seeds and pulp removed
3 large eggs
100g golden caster sugar
85g butter , melted
100ml milk
140g plain flour
½ tsp baking powder
icing sugar , to dust
clotted cream , to serve (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line a large, deep roasting tin with a tea towel, set aside, and boil the kettle. Put 100g of the curd in a bowl, mix the remaining curd with the passion fruit seeds and pulp, and divide between 6 teacups or ramekins (mine were around 200ml).
  • Whisk the eggs and sugar together in a large bowl until pale and fluffy - this will take about 5 mins. Add the reserved curd, butter, milk, flour and baking powder. Fold the mixture together with a spatula until there are no visible lumps of flour, then divide between the teacups.
  • Put the teacups in the roasting tin. Carefully fill the tin with hot water from the kettle to come about halfway up the sides of the teacups, being careful not to get any water in the cups. Bake for 50 mins until risen and golden. Once cooked, you can cool the puddings and chill for up to a day, or wrap in cling film and freeze for up to 2 months. To reheat, bring to room temperature, put back in a hot water bath in the oven and bake for 15 mins at 160C/140C fan/gas 3. Before serving, dust each pudding with a little icing sugar and put a spoonful of clotted cream on top, if you like.
