EGG AND WATERCRESS TEA SANDWICHES

Egg and Watercress Tea Sandwiches image

Just like the dainty sandwiches served at Harrods! For a less traditional tea sandwich, you can use pumpernickel, rye or sourdough bread, thinly sliced. For a visual treat, garnish the patter of sandwiches with edible flowers such as pansies or nasturtiums, along with the watercress.

VICTORIAN WATERCRESS TEA SANDWICHES FOR HIGH TEA AND PICNICS

Victorian Watercress Tea Sandwiches for High Tea and Picnics image

During Victorian times, children used to take watercress sandwiches to school in place of meat ones. I love them, especially when cut into small trianges and served with a cuppa (cup of tea!). Use the freshest bread - I like to use wholemeal, and a fresh salted farmhouse butter. I have included a soup idea at the end of the recipe, to be made with the excess stalks! So a soup and sandwich recipe then!

Time 5m

Yield 8 Rounds of Sandwiches, 4 serving(s)

Number Of Ingredients 4

2 bunches watercress
softened butter
16 thin slices bread
sea salt and black pepper

Steps:

  • Snip the stalks from the watercress and place the leafy ends on kitchen paper to absorb any water. Butter the bread generously, arrange the watercress over 4 slices and season. Top with the remaining bread, cut into triangles or fingers and serve.
  • NB. (Don't discard the watercress stalks; they can be made into a soup. Soften a chopped onion in a pan with butter, add 250ml whole milk and bring to the boil. Add the stalks, cook for 1 minute then liquidise until smooth and foamy.).

GRILLED GORGONZOLA, PEAR, AND WATERCRESS SANDWICHES

Grilled Gorgonzola, Pear, and Watercress Sandwiches image

Categories     Sandwich     Fruit     Broil     Quick & Easy     Lunch     Blue Cheese     Pear     Winter     Watercress     Gourmet

Yield Serves 4

Number Of Ingredients 4

4 ounces chilled Gorgonzola cheese (for strong flavor) or 6 ounces chilled Saga Blue cheese (for milder flavor)
1 firm-ripe pear such as Bartlett or Anjou
four 1/2-inch-thick slices whole-grain bread
1 cup watercress sprigs (about 1/2 bunch, coarse stems discarded)

Steps:

  • Preheat broiler.
  • Cut cheese into thin slices. Halve pear lengthwise and core with a lemon-ball cutter. Slice pear thin crosswise.
  • On a baking sheet toast both sides of bread about 3 inches from heat until golden. Divide watercress among toasts and cover with overlapping pear slices. Arrange cheese over pear slices and broil sandwiches until cheese is melted, about 1 minute.

Tips:

  • Choose fresh, tender watercress with deep green leaves and crisp stems.
  • Wash watercress thoroughly and pat dry before using.
  • To make watercress sandwiches, use a light, airy bread that won't overpower the delicate flavor of the watercress.
  • Add other ingredients to your watercress sandwiches, such as sliced cucumber, avocado, or hard-boiled eggs, for extra flavor and texture.
  • For a vegetarian or vegan watercress sandwich, use a plant-based spread or dressing instead of butter or mayonnaise.
  • Serve watercress sandwiches immediately after making them, as the bread can quickly become soggy.

Conclusion:

Watercress sandwiches are a refreshing and delicious lunch option that are perfect for summer picnics or packed lunches. They are also a great way to use up leftover watercress from your garden or farmers market. With a few simple ingredients and a little creativity, you can create a delicious and healthy watercress sandwich that everyone will enjoy.
