Time 25m

Yield 12-24 meatballs

Number Of Ingredients 15

1 lb ground beef
1 small onions, finely chopped (I prefer dried minced onion) or 1 tablespoon dried onion flakes (I prefer dried minced onion)
1/3 cup crushed gingersnap cookie
1/2 teaspoon salt
1/8 teaspoon pepper
2/3 cup evaporated milk (I use fat-free)
1 cup water
2 tablespoons cider vinegar
2 tablespoons catsup
1 tablespoon brown sugar
8 peppercorns
1 bay leaf
1/2 teaspoon salt
1/3 cup raisins
6 gingersnap cookies, crushed

Steps:

  • Mix beef, crushed gingersnaps, onion, salt, pepper, and evaporated milk in a large mixing bowl. (This may seem wet, but it will firm up with kneading).
  • Spray a large non-stick skillet; shape meat mixture into meatballs and brown evenly.
  • Mix remaining ingredients.
  • When meatballs are browned, add liquid mixture. bring to a boil.
  • Cover tightly, reduce heat to low, and simmer 15 minutes.

Tips:

  • Opt for lean beef cuts like top round, sirloin, or chuck roast to minimize excess fat while retaining flavor.
  • Soak the breadcrumbs in milk or broth before incorporating them into the meatball mixture. This helps bind the mixture and adds moisture to the meatballs.
  • Use freshly grated spices like nutmeg, cloves, and ginger for a more intense flavor profile.
  • Chill the meatball mixture for at least 30 minutes before cooking. This helps the flavors meld and prevents the meatballs from falling apart.
  • Sear the meatballs in a hot pan before simmering them in the sauce. This creates a delicious crust and locks in the juices.
  • Use a combination of red wine and beef broth for the sauce to create a rich and flavorful base.
  • Simmer the meatballs in the sauce for at least 30 minutes, or until they are cooked through. This allows the flavors to develop and the meatballs to absorb the sauce.
  • Serve the meatballs with mashed potatoes, egg noodles, or your favorite side dish.
