These cookies are wonderful, and good for you too! I prefer to use real butter but margarine can be substituted. Wheat germ can also be substituted for the wheat bran. My two year old loves these and I feel less guilty letting him eat them.

WHEATIES COOKIES

These are my all time favorite cookies. My grandmother has been making these longer than I have been around! I believe that her mother got the recipe on a trip to California. Be sure not to brown them, you DO NOT want to over bake them. The yield is approx along with the servings, the recipe is so big!

Tips:

  • Use fresh shredded coconut: Fresh shredded coconut has a much better flavor and texture than dried coconut. If you can't find fresh shredded coconut, you can use unsweetened dried coconut, but be sure to rehydrate it in warm water before using.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature: Baking the cookies at a high temperature will help them develop a crispy exterior and a chewy interior.
  • Let the cookies cool completely before serving: The cookies will continue to firm up as they cool. Let them cool completely before serving for the best flavor and texture.

Conclusion:

Wheaties coconut cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their simple ingredients and classic flavor, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet snack, give these cookies a try.
