1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. Stir in cranberries and vanilla chips. Divide dough into three portions. , On ungreased baking sheets, shape each portion into a 10-in. x 2-in. rectangle. Bake at 350° for 20-25 minutes or until lightly browned. 1 teaspoon vanilla extract
1-3/4 cups all-purpose flour

Steps:

  • Preheat oven to 325°. In a small bowl, beat sugar and oil until blended. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to sugar mixture and mix well. A perfect holiday cookie! You can substitute dried cherries for the cranberries, use a good quality white chocolate for this, I use Lindt or Baker's. These can be made up to 1 week ahead, or freeze in an air tight container. I highly suggest to double this recipe, these are wonderful biscotti!

2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups sugar (can use another 1/4 cup more for a sweeter taste)
1/2 cup butter, room temperature
2 large eggs
1 1/2 teaspoons almond extract
1 1/2 cups dried cranberries
1/2-3/4 cup almonds (chopped or sliced)
1 egg white
8 ounces white chocolate

Steps:

  • Set oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • In a bowl whisk together flour with baking powder and salt.
  • Using an electric mixer beat the butter, sugar and eggs with extract until well blended (about 4 minutes).
  • Add in the flour mixture, then the cranberries and almonds; mix well to combine.
  • Divide the dough in half.
  • With floured hands shape the dough in about 9 x 2-inch logs.
  • Transfer the logs to prepared baking sheet, spacing evenly.
  • In a small bowl whisk the egg white until foamy, the brush the egg white on top and sides of each log.
  • Bake the logs until golden brown, about 35 minutes (the logs will spread when baked).
  • Cool completely in the baking pan (leave the oven heat on to 350 degrees).
  • Transfer the logs to a work surface.
  • Shake out any crumbs from the parchment paper, then place back on the baking sheet with clean-side facing upwards.
  • Using a serrated knife, sliced the logs on diagonal about 1/2 - 3/4-inches.
  • Arrange the sliced biscotti cut side down on the same baking sheet.
  • Bake for 10 minutes; turn the biscotti over and bake for another 5 minutes, just until beginning to lightly brown.
  • Transfer biscotti to a rack to cool.
  • For the glaze: stir the white chocolate in a double boiler over simmering water until smooth.
  • Remove from over the water.
  • Using a fork, drizzle chocolate over biscotti.
  • Let stand until chocolate sets (about 30 minutes).

  • Pre-heat oven to 325 degrees.

1 cup dried raspberries or chopped dried strawberries (about 5 ounces)

8 ounces high-quality white chocolate (such as Lindt or Perugina) and/or 8 ounces bittersweet or semisweet chocolate, chopped

Steps:

  • Preheat oven to 350°F. Line large baking sheet with parchment paper. Whisk flour, baking powder, and salt in medium bowl to blend. Using electric mixer, beat sugar, eggs, oil, and almond extract in large bowl until well blended. Add flour mixture and beat until smooth. PUMPKIN BISCOTTI WITH WHITE CHOCOLATE

I included them on my Christmas cookie platters this year, and everyone made a point of telling me how good they were. I found the recipe on the web. The raisins were my idea. Dried cranberries would be as good, if not much, much better. Or leave them out completely. Both light and dark brown sugar work beautifully, although I think I like the dark brown sugar version just a tiny tad more. I used good-quality white chocolate chips mixed with about 1/2 teaspoon of shortening for the drizzle. And if you can, use freshly ground nutmeg. Also, you can use up to 3/4 cup raisins or dried cranberries. Any way you try it, I think you'll love them. (Time does not include chilling time.)

2 1/4 c plus 2 tb flour
1 tsp baking powder
1/2 tsp baking soda
1 c chopped walnuts
2 tsp cinnamon

1/4 tsp nutmeg
1/4 tsp salt
2 tsp orange zest
3/4 c chopped apricots
3 Tbsp melted butter
2 Tbsp orange juice
2 eggs
4 Tbsp molasses
WHITE ICING
1 c white chocolate candy melts or white chocolate chips
1 1/2 tsp shortening
1/2-3/4 tsp orange zest
1 tsp milk( add more if needed for drizzling)

Steps:

  • 1. heat oven to 350 degree's whisk together all of the dry ingredients in a large bowl. Make sure to chop up any lumps from the brown sugar.Whisk until very well incorporated.
  • 2. add the apricots and nuts and stir really well. add the molasses, orange juice, orange zest, eggs,and butter.
  • 3. put your hands in the bowl and knead the dough. knead until all ingredients are well mixed. This will take about 5 minutes. Be patient. Just keep squeezing the dough together when kneading it. It will become smooth and moist after kneading it well.
  • 4. Flour your hands well. Take the ball of dough and place on parchment or waxed paper. Make in to a log about 4-5 inches wide by 16- 18 inches long and 1 inch in thickness.Pick up log and place on a parchment lined cookie sheet.(butter the sheet pan before applying the parchment on top. this will help keep the parchment in place.)
  • 5. Bake at 350 for 30-40 min.. Remove from oven and cool for 15 minutes. Leave log on sheet pan. Cut slices with a serrated knife about one inch or less in thickness.
  • 6. lay the pieces you cut on their sides on the parchment lined pan.Put back in the oven for 10 minutes. do not over brown. It depends on how hard you like your Biscotti. The longer you bake them. The harder they will be. I prefer them harder, and crunchy. Remove from oven and flip cookie over. 3/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
4 TB. cold butter cut into small pieces
1 egg, slightly beaten
1/3 c. whole milk
1/2 tsp. vanilla extract
1 TB. key lime juice
1 c. chopped toasted walnuts or pistachios
1 bar white chocolate or 3 1/2 oz. white chocolate chunks

Steps:

  • 1. Preheat oven to 350°. 2. Whisk together flour, sugar, baking powder and salt. Add butter and use mix until the dough resembles coarse meal. 3. Add egg, milk, vanilla, and key lime juice and blend until the dough becomes soft, then add the walnuts and white chocolate chunks. 4. Form dough into two or three long narrow rolls on a large cookie sheet lined with waxed paper - leave plenty of space between rolls as they'll expand in the oven. 5. Bake for 20 minutes then cool on a wire rack for 20 minutes. While the biscotti is resting, lower oven temperature to 300°. 6. Cut biscotti on the diagonal into ½ in. thick slices and arrange on cookie sheet lined with waxed paper. Bake 30 minutes. Biscotti will harden as they cool. Store for up to 2 weeks in airtight container, layering biscotti between sheets of waxed paper.

1 cup butter
1 ½ cups sugar
4 eggs
2 teaspoons vanilla extract
¼ cup amaretto liqueur
4 cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
1 ⅓ cups chopped macadamia nuts
1 ⅓ cups white chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a cookie sheet or line with parchment paper.
  • In a large bowl, cream together butter and sugar until fluffy. Beat in eggs, vanilla and amaretto. In a separate bowl mix flour, baking powder and salt. Stir flour mixture into butter mixture. Fold in nuts and white chocolate chips.
