2 cups whipping cream
6 tablespoons Irish cream liqueur
1/4 cup sugar
1/2 teaspoon vanilla extract
2 teaspoons cornstarch
2 teaspoons water
Bread pudding
14 cups 3/4-inch cubes French bread with crust (about 12 ounces)
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
6 ounces imported white chocolate, chopped
4 large eggs
1/2 cup plus 4 tablespoons sugar
2 teaspoons vanilla extract
2 cups whipping cream
1/2 cup whole milk
Nonstick vegetable oil spray

Steps:

  • For sauce:
  • Bring cream, liqueur, sugar, and vanilla to boil in heavy medium saucepan over medium-high heat, stirring frequently. Mix cornstarch and 2 teaspoons water in small bowl to blend; whisk into cream mixture. Boil until sauce thickens, stirring constantly, about 3 minutes. Cool, then cover and refrigerate until cold, about 2 hours. (Can be made 3 days ahead. Keep refrigerated.)
  • For bread pudding:
  • Combine bread, chocolate, and white chocolate in large bowl; toss to blend. Using electric mixer, beat eggs, 1/2 cup plus 2 tablespoons sugar, and vanilla in another large bowl to blend. Gradually beat in 1 1/2 cups cream and milk. Add cream mixture to bread mixture; stir to combine. Let stand 30 minutes.
  • Preheat oven to 350°F. Spray 13x9x2-inch glass baking dish with nonstick spray. Transfer bread mixture to prepared dish, spreading evenly. Drizzle with remaining 1/2 cup cream. Sprinkle with remaining 2 tablespoons sugar. Bake pudding until edges are golden and custard is set in center, about 1 hour. Cool pudding slightly.
  • Drizzle bread pudding with sauce and serve warm.

3 boneless skinless chicken breasts (cooked and shredded)
1/2 teaspoon chili powder
2 1/2 cups shredded Monterey Jack cheese (divided)
8 soft flour tortillas
3 Tablespoons butter
3 Tablespoons flour
2 cups chicken broth
1 cup sour cream
1 (4 ounce) can diced green chilies
1 teaspoon dried cilantro
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 13 inch pan using non-stick cooking spray.
  • Mix cooked chicken, chili powder (optional) and 1 cup of cheese together. Roll up in tortillas and place in pan.
  • In a medium sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
  • Stir in sour cream, chilies, cilantro, onion powder, and garlic powder, and pepper. Make sure that you don't bring this to a boil- you don't want to have curdled sour cream!
  • Pour over enchiladas and top with remaining cheese.
  • Bake 20-22 minutes and then place under high broil for 3 min to brown the cheese.

I have had chicken in white wine cream sauce at a local restaurant and found it was probably my favorite chicken dish. I have searched in vain for a recipe that would include all the ingredients I now only vaguely remember. So, in desperation, I found a basic recipe and have adapted it. I have made this a few times and found it very close to what I remember. The only missing ingredient is cheese. I have yet to remember what cheese was used (other than it was a white cheese). Eventually I will experiment with adding cheese, but for now I am really pleased with this version. I hope you like it too.

2 tablespoons olive oil
1/2 cup onion, chopped
3 minced garlic cloves
5 -6 fresh mushrooms, sliced
1/4 cup butter
1/4 cup white wine
1 dash Worcestershire sauce
1 pint cream (heavy or light)
salt and pepper
1 teaspoon basil
1 teaspoon parsley

Steps:

  • Lightly brown both sides of chicken in olive oil.
  • Add onion, garlic, mushrooms, and butter and saute about 4-5 minutes until onions start to become translucent.
  • Add wine and Worcestershire sauce and cook an additional 2 minutes.
  • Lower heat and add cream, salt, pepper, basil, and parsley.
  • Too high of heat will cause the cream to curdle.
  • Simmer on low 20-25 minutes until done.

2 tablespoons butter
2 tablespoons flour
1 cup milk
1/4 cup grated romano cheese or 1/4 cup parmesan cheese
salt and pepper

Steps:

  • Melt butter over low heat in wide sauce pan, or deep skillet.
  • Stir in flour and mix with a wooden spoon until blended.
  • Slowly add milk to pan, careful not to burn it.
  • When milk is fully intergrated into rue, increase heat and reduce for 10 minutes, stir often to prevent burn.
  • If sauce too thick, add more milk.
  • If too thin, add more flour.
  • Add salt and pepper to taste.
  • Pour over warmed buttered pasta, and cover with cheese.

2 tablespoons crushed espresso beans
2 tablespoons high-quality Dutch processed cocoa powder, such as Valrhona or Callebaut

1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/2 cup high-quality Dutch processed cocoa powder, such as Valrhona or Callebaut
2 teaspoons baking powder

  • For the white chocolate custard sauce: Combine the half-and-half and vanilla bean and seeds in a small saucepan over medium heat and bring to a simmer. Remove from the heat and let cool slightly.
  • Whisk together the egg yolks and granulated sugar in a medium bowl until pale yellow. Slowly whisk in some of the warm half-and-half mixture until smooth. Pour the mixture back into the saucepan and cook over medium heat, stirring with a wooden spoon, until it thickens slightly and coats the back of the spoon. Do not boil. Remove from the heat, add the white chocolate and whisk until smooth. Strain into a bowl, cover, and chill until cold.
  • For the chocolate-espresso whipped cream: Combine the cream, cocoa nibs and espresso beans in a small saucepan and bring to simmer. Immediately remove from the heat and refrigerate until cold. Strain the cream into a chilled bowl, add the cocoa powder, confectioners' sugar and vanilla and whip to soft peaks.
  • For the dark chocolate waffles: Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Whisk together the egg yolks and brown sugar until smooth. Add the buttermilk, oil and vanilla and whisk until combined. Add the wet mixture to the dry mixture and mix until just combined. Fold in the butter and chocolate.
  • Whip the egg whites in a medium bowl until soft peaks form. Fold the whites into the batter.
  • Heat a waffle iron according to the manufacturer's instructions. Brush the grates with butter and ladle 1/4 cup of batter in each grate, close, and cook until crisp and browned and steam stops coming from the waffle iron, 4 to 5 minutes. Repeat with the remaining batter. Serve with the custard sauce, whipped cream, some strawberries and a dusting of confectioners' sugar.

1 onion, diced
4 garlic cloves, crushed
20 small mushrooms, thinly sliced
1 chicken stock cube, undiluted
1 cup white wine
2 cups heavy cream
olive oil, to fry

Steps:

  • Fry the onion, garlic and mushrooms in a little olive oil. Do not fry them long enough to change their colour.
  • Add the wine and simmer for about 5 minutes until the wine has largely soaked in.
  • Crumble in the stock cube.
  • Add the cream.
  • Reduce the heat to slowly bring to the boil and leave to simmer and thicken- this should take 5-10 minutes.
  • If it does not thicken enough, add a little more chicken stock cube and simmer a bit longer.

8 large white asparagus
2 tablespoons chives, cut in 3/4-inch lengths
2 teaspoons extra-virgin olive oil
Salt and ground white pepper
1 tablespoon butter
1 cup salted cashews
1/3 cup milk

Steps:

  • Heat oven to 400 degrees. Trim the dry ends off the asparagus. If necessary, peel the fibrous exterior of the bottom half of each spear. Cut the top 3 1/2 inches of each stalk and set aside. Using a sharp knife, very finely julienne two or three of the stalk bottoms (reserve the rest for another use) and place in a small bowl. Add the chives, olive oil and salt and pepper to taste and set aside.
  • On a sheet of heavy-duty or a double layer of aluminum foil, place the asparagus tips standing up and crimp the foil around them at the bottom so that they remain standing. Add the butter on top of the spears, and continue to crimp the foil closely around the spears, sealing it closed at the top. Place in the oven and roast until barely tender, about 20 minutes. Place 2/3 of the ground cashews into a small saucepan; set aside the remainder for garnish. Add the milk to the pan, with 1/3 cup water. Bring to a boil and immediately turn off heat. Mix well; set aside.
  • When the asparagus is ready, open the packet and baste it with the juices from the bottom of the foil. On each of 4 small plates, arrange a spoonful of cashew cream and top with two asparagus tips. Place the asparagus julienne on the side and garnish with crushed cashews.

1 tablespoon Dijon mustard

2 1/2 cups all-purpose flour, plus more if needed
1/4 cup unsweetened cocoa powder, preferably Dutch-processed
1/4 cup powdered sugar
Pinch salt
3 large eggs, beaten
1 tablespoon chocolate syrup
1 teaspoon vanilla extract
1 cup heavy cream
1 cup chocolate hazelnut spread, such as Nutella
1 pinch salt
2 pints raspberries, for garnish
Creme fraiche, for garnish
White chocolate shavings, for garnish
Chopped skinless, toasted hazelnuts, for garnish

Steps:

  • For the pasta: Sift together the flour, cocoa and sugar. Add a pinch salt and mound the flour mixture in a large bowl or on a clean work surface. Hollow out the center, making a well in the middle of the flour with steep sides. Break the eggs into the well. Add the chocolate syrup and vanilla. Gently mix together with a fork. Gradually start incorporating the flour by pulling in the flour from the sides of the well. As you incorporate more of the flour, the dough will start to take shape. Once it gets thick, you can use a spatula to incorporate the rest of the flour.
  • If the dough is too dry, add a little water. If the dough is too wet or sticky, add a little flour. Once the dough comes together, knead the dough on a clean work surface until it becomes smooth, about 8 minutes. Shape into a disc, cover with plastic wrap and let rest in the fridge, 20 to 30 minutes.
  • Divide your rested dough into quarters and work with one piece at a time, covering your other pieces to keep them moist. Flour each piece lightly, shape it into a rectangular shape and put it through a pasta sheeter attachment, starting at the widest setting. Run the dough once through the largest setting, fold it into thirds and run it through one more time. Then run the pasta through the sheeting attachment once on every number, stopping at 5 or 6, depending on how thick you would like it. Lightly flour the rolled out pasta sheet and fold in half. Take your chef knife and cut ribbons about a 1/2-inch thick, then unravel the pasta ribbons and place on a floured baking sheet to keep from sticking.
  • For the sauce: Bring the heavy cream to a simmer in a heavy-bottomed saucepan over medium-high heat and stir in the chocolate-hazelnut spread. Add a pinch salt and continue whisking until the sauce is creamy. Remove from the heat and reserve.
  • Cook the chocolate pasta in a large pot of boiling water, 3 minutes. Immediately remove the pasta from the water and toss gently with the sauce and a little of the pasta cooking water to help with the consistency.
  • Mound the pasta and sauce on dessert plates and garnish with the fresh berries, a dollop of creme fraiche, white chocolate shavings and skinless toasted chopped hazelnuts, to garnish.

8 ounces white chocolate, cut into small chunks
2 cups half-and-half
1/2 cup unsalted butter, softened
12 teaspoons ground cinnamon
10 ounces day-old croissants, cut into 1/2-inch pieces
3 eggs
3/4 cups sugar
3 cups fresh Fredericksburg peaches, peeled and chopped into bite-size pieces
1/2 cup toasted chopped pecans
1 tablespoon vanilla extract

Chantilly Cream

Steps:

  • Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. In a 2-quart saucepan, combine the white chocolate, half-and-half, cinnamon, and butter. Cook over medium-low heat, stirring often, until smooth. Remove from heat and set aside.
  • Place croissant pieces in a large bowl and stir in the white chocolate mixture, blending well and breaking up the croissants. In bowl of electric mix, combine eggs and sugar; beat at medium speed until thickened, about 7 minutes.
  • Add the peaches, pecans, and vanilla; beat just to blend. Fold egg mixture into the croissants, blending well. Turn out into prepared baking dish and bake in preheated oven for 45 to 55 minutes, or until a knife inserted in center comes out clean. Set aside to cool.
  • To serve, slice the warm pudding into squares. Place a portion of the peach sauce in the bottom of each serving bowl and set a square of pudding in the center. Top with a large dollop of Chantilly cream.

This is my recipe for pork chops baked in the oven with green bell pepper and onion then covered in a mushroom cream sauce and served with rice. This recipe was made in a Panasonic CIO and appears on an episode of the Dinner Spinner TV Show on The CW!

2 cups water
1 cup white jasmine rice
½ teaspoon salt
1 tablespoon butter
4 (1/2-inch thick) pork chops
1 tablespoon olive oil, or to taste
½ teaspoon Creole seasoning, or to taste
salt and ground black pepper to taste
1 green bell pepper, sliced
½ small onion, sliced
¼ cup butter
½ cup sliced fresh mushrooms
¼ cup chopped onion
2 cups half-and-half
1 tablespoon all-purpose flour
½ teaspoon ground paprika, or to taste

Steps:

  • Combine water, rice, and 1/2 teaspoon salt in a saucepan; bring to a boil. Reduce heat to low, cover, and cook until rice is tender, about 20 minutes. Remove from heat and add 1 tablespoon butter; stir until rice is fluffy.
  • Preheat oven to 350 degrees F (175 degrees C). (If using a countertop induction oven, preheat on the "Combo 1" setting.)
  • Place pork chops in a 9-inch baking pan (or grill pan if using the countertop induction oven). Drizzle olive oil on top. Sprinkle Creole seasoning, salt, and pepper over both sides. Arrange green bell pepper and onion slices on and around pork chops.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 20 minutes in the conventional oven and 10 to 15 minutes in the countertop induction oven. Cover with aluminum foil.
  • Melt 1/4 cup butter in a large skillet over medium heat. Add mushrooms and chopped onion; cook and stir until onion is translucent, about 5 minutes. Pour in half-and-half. Stir in flour slowly; cook and stir until sauce thickens, about 5 minutes.
  • Pour sauce over pork chops; stir to incorporate juices in the pan.
  • Return pork chops to the preheated oven and bake until flavors combine, 3 to 5 minutes. Serve over rice. Sprinkle paprika on top.

6 clove garlic chopped
1 Tbsp butter
3 green onions chopped
1/3 c white wine
2 c chicken broth
1 c water
1/2 c heavy cream
pinch all purpose seasoning
1/2 tsp thyme, dried
3 slice crisp bacon
3 lb manila clams
salt and pepper to taste

Steps:

  • 1. Saute the butter, garlic and green onions. Deglaze the pan with the white wine and reduce to half. Add 1 cup chicken broth and bring to a simmer. Add heavy cream and bring back to a simmer. Add all purpose seasoning and thyme. Salt and pepper to taste.
  • 2. In another pan bring remaining cup of chicken broth and water to a boil. Add clams and cover. Steam clams until all have opened.
  • 3. Remove clams from pan and place in a bowl and pour creamy broth mixture over clams and crumble bacon on top. Serve immediately.

2 teaspoons oil
2 garlic cloves, minced
1 large red chile, de-seeded and finely chopped
300 g peeled headless king prawns
5 shallots, finely chopped
8 cherry tomatoes, sliced in half
1/2 teaspoon black pepper
150 ml chicken stock
125 ml white wine
150 ml double cream
shaved parmesan cheese
fresh basil, chopped

Steps:

  • In a 12 inch frying pan over medium high heat the oil.
  • Add the chilli and garlic and cook for 3 minutes.
  • Add king prawns and cook, turning so they cook evenly on each side, until they are only just pinked through.
  • Lift out the king prawns and put to one side.
  • Add to pan the shallots, tomatoes, black pepper, stock, wine and cream.
  • Simmer on a medium to high heat (do not cover) until reduced, around 10 minutes.
  • Add the king prawns back in, then the basil and stir until heated through.
  • Serve spooned over your favourite type of pasta (fresh pasta is a must), sprinkled with freshly grated parmesan cheese and garlic bread for mopping up the sauce.

There is no way to go wrong with any seafood combo.I hope the seafood lovers enjoy this recipe! Note: If you add more wine it becomes less creamy.

4 tablespoons minced garlic
3 cloves shallots, chopped

2 tablespoons tarragon

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley and tarragon and let the liquid reduce by half.
  • Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, add the tomatoes and shrimp and let the sauce reduce to medium thickness. Season to your taste,.
  • Toss the drained pasta or rice with the cream sauce and seafood,.

For the white chocolate passion fruit turnovers:
5 ounces high-quality white chocolate, such as Lindt
3 ounces thawed passion fruit pulp*
2 tablespoons heavy cream
1/8 teaspoon sea salt
2 large egg yolks
8 (3 1/2-inch) puff pastry rounds cut from 2 thawed sheets frozen puff pastry (from one 1-pound package)
For the blueberry-mint sauce:
1 cup blueberries
2 ounces cubed pineapple
1/4 cup water
2 tablespoons freshly squeezed lemon juice
2 tablespoons sugar
1 ounce fresh mint leaves
For the coconut cream:
1 cup heavy cream
1/4 cup sugar
2 ounces shredded unsweetened coconut
1 teaspoon ground cinnamon
*Passion fruit pulp can be found in Latin markets and some supermarkets. If you can't find it, substitute several ripe passion fruit. Force flesh through a fine-mesh sieve into a bowl (the pulp will be very liquid), discarding seeds, until it measures 3 ounces.
Equipment:
1 large baking sheet; parchment paper; blender or food processor; fine-mesh sieve

Steps:

  • Make the white chocolate passion fruit turnovers:
  • In a dry metal bowl set over a pan of barely simmering water, melt the white chocolate. Remove from the heat and add the passion fruit pulp, heavy cream, and salt and stir to combine. Slowly and carefully add the egg yolks, stirring to combine. Place the bowl over the pan of barely simmering water and heat, stirring constantly, until thickened. Remove from the heat, cover, and chill.
  • Line a large baking sheet with parchment paper and preheat the oven to 400°F.
  • Once the white chocolate filling is completely cold, make the turnovers: Arrange the puff pastry rounds on a work surface and fold each one in half. Fill the turnovers with the chilled white chocolate filling and crimp the edges to seal them closed. (Brush the edges of the pastry with water, if necessary, to seal the turnovers.) Transfer to the prepared baking sheet and bake, flipping them over about halfway through the baking time, until golden brown, about 20 minutes.
  • Make the blueberry-mint sauce:
  • In a medium saucepan over moderate heat, combine the blueberries, pineapple, water, lemon juice, and sugar. Bring to a simmer and continue simmering for about 3 minutes. Transfer to a blender or food processor, add the mint, and process until smooth. Pour the purée through a fine-mesh sieve into a bowl. If the sauce is very thin, place it in a medium saucepan and simmer until it's reduced to the desired consistency.
  • Make the coconut cream:
  • In a medium bowl, combine the heavy cream and sugar and whip until medium-stiff peaks form. Fold in the coconut and cinnamon.
  • To serve:
  • Arrange 2 turnovers on each of 4 plates, drizzle with the blueberry-mint sauce, and top each with a generous dollop of coconut cream.

For the sauce
1-2 lbs fresh shrimp, cleaned and devained
4-8 oz of mushrooms, sliced 1/8" thick
1 Zucchini, Julienned
1 medium sized onion, diced
4-8 cloves of garlic sliced long and thin
Handful flat-leaf parsley
1 Pint Heavy cream sauce
1 cup Dry white wine
Olive oil
Cayenne pepper (optional)
Parmesan cheese
For the shrimp
Milk
Flour
Parmesan cheese
Salt & pepper
1 lb. cooked fuscilli.

Steps:

  • Pour enough olive oil in a large sauce pan to cover the bottom, turn to medium high heat. This is the only pot you'll need for the sauce so it should be big. I like to use an iron kettle. Soak the shrimp in milk and combine the dry ingredients (flour, cheese, salt, pepper). Coat the shrimp with the dry ingredients and let them fry in the olive oil, maybe 2 minutes per side until golden brown. Between batches of shrimp vigorously mix the oil and flour (whatever falls off the shrimp, this will add great flavour and consistency to the sauce). Add more oil as necessary. Dab the shrimp with a paper towel and put aside. Add the onions to the oil, stir for a few minutes, then add the garlic and turn the heat to medium low. Let the flavors mix for a few more minutes before adding the mushrooms. After a few more minutes add the zucchini. Taste the food and spice accordingly, you'll defiantly need some salt. Now add the wine and bring it to a boil. Then turn the heat to low and cover, let the wine reduce, maybe 10-15 minutes. Add the cream, and bring it back to a boil, turn heat to low and simmer for 10 more minutes. Now add the fried shrimp, parsley and parmesan cheese. The sauce will harden some as it cools. Slowly add your cooked pasta until you have the right sauce to noodle ratio.
