1/2 pound whole-wheat spaghetti pasta
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 tablespoon olive oil
4 (4-ounce) pieces salmon
1/4 cup chopped fresh basil leaves
3 tablespoons capers
1 lemon, zested

Tips:

  • Choose the right pasta: Whole grain spaghetti is a great choice for this recipe because it is a healthier alternative to regular pasta and has a nutty flavor that pairs well with the pesto.
  • Make sure the broccoli is cooked al dente: This means that it should be tender but still have a slight crunch to it. Overcooked broccoli will be mushy and unappetizing.
  • Use fresh herbs in the pesto: Fresh basil, parsley, and thyme will give the pesto the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but the flavor will be less intense.
  • Toast the almonds before adding them to the pesto: Toasting the almonds will bring out their flavor and give the pesto a more complex flavor.
  • Serve the pasta immediately: Pesto is best when it is freshly made, so serve the pasta as soon as it is cooked.

Conclusion:

This whole grain spaghetti with herb-almond pesto and broccoli is a delicious and healthy meal that is perfect for a weeknight dinner. The pesto is flavorful and easy to make, and the broccoli adds a pop of color and nutrition. This recipe is sure to please everyone at the table.
