Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 5

2 eggs
salt and pepper
1 wild turkey breast
1 1/2 cups flour
oil (for deep frying)

Steps:

  • In a shallow bowl beat eggs, then add salt and pepper.
  • Tear strips of turkey off breastbone.
  • Dip turkey in eggs, then flour.
  • Bring oil to 375 degrees in a Dutch oven or large stock pot, making allowance for the volume of the turkey, and fry turkey on medium-high until browned.
  • Cover Dutch oven while frying to prevent splattering.

Tips:

  • Prep your turkey breasts properly: Remove the skin from the breasts, as it can make the meat tough. If you want to keep the skin on, score it deeply so the marinade can penetrate.
  • Use a flavorful marinade: The marinade is key to infusing flavor into the turkey breasts. Experiment with different ingredients to create a marinade that suits your taste. Be sure to marinate the turkey for at least 4 hours, or up to overnight.
  • Cook the turkey breasts over indirect heat: This will help prevent the meat from drying out. You can do this on a grill, in a smoker, or in the oven. If you're using a grill, cook the turkey breasts over low heat for 1-1½ hours, or until they reach an internal temperature of 165 degrees Fahrenheit.
  • Let the turkey breasts rest before carving: This will allow the juices to redistribute throughout the meat, making it more tender and flavorful. Let the turkey breasts rest for 10-15 minutes before carving.

Conclusion:

Wild turkey breasts are a delicious and healthy way to enjoy this classic American game bird. With their lean meat and mild flavor, they're a great choice for a variety of dishes. Whether you're grilling, smoking, or roasting your turkey breasts, be sure to follow the tips above to ensure they come out perfectly cooked and flavorful.
