4 cups fresh peaches - peeled, pitted and chopped
½ cup chopped onion
½ cup chopped red bell pepper
4 jalapeno peppers, minced
¼ cup chopped fresh cilantro
3 cloves garlic, minced
1 ½ teaspoons ground cumin
¼ cup distilled white vinegar
1 teaspoon grated lime zest
¼ cup white sugar
1 (49 gram) package light fruit pectin crystals
3 ½ cups white sugar

Steps:

  • Sterilize jars and lids.
  • In a large saucepan, combine peaches, onion, pepper, cilantro, garlic, cumin, vinegar, and lime zest. Stir together pectin and 1/4 cup sugar. Bring to a boil, and stir in remaining 3 1/2 cups sugar. Boil for 1 minute, stirring constantly. Remove from heat, and stir for 5 minutes.
  • Pour peach salsa into prepared jars, leaving 1/4 inch air space. Seal, and process in a boiling water bath for 15 minutes.

This is the best salsa recipe I've found so far and I've tried about a dozen. I got it from one of the local hospital cookbooks that are sold in my area. I changed it a bit and have been canning it for years. The reason I plant a garden is for this salsa. We would be lost without it. Hope you like it as much as we do. One of our members who is a food scientist took this salsa to work, tested the pH and found it measured under 4.0 (well within the safety limit for boiling water bath processing).

2 1/2 cups onions, chopped

  • In a 5-qt. slow cooker, combine the first 7 ingredients; stir in 2 cups peaches. I am a salsa lover and Paul Newmans has a peach salsa that is great, so I went in search of a peach salsa (more tomato then peaches) and couldn't find any. I canned Wonderful Salsa, recipe #9272 last year and decided to try and can my own peach salsa. I would like to thank Jazze22 for sharing her orginal recipe. I thought that with the changes and the fact that I coudln't find one posted, I should post it in case others might be looking for a peach salsa. To reduce the heat, take out the veins and seeds in the peppers. Remember to wear gloves when handeling the peppers. I hope you enjoy it as much as I do.

100 ounces diced tomatoes (3 jumbo cans, 1 smaller regular sized can, you can drain them or not, I drained mine to keep it chun)
2 (16 ounce) bags sliced peaches (chopped into small pieces)
1 large yellow onion (diced)
1 red pepper (diced)
1 yellow pepper (diced)
1 orange bell pepper (diced)
4 teaspoons minced garlic (or to taste)
1 teaspoon kosher salt
1 1/4 cups white vinegar
1/4 cup honey (or to taste)
1/4 cup sugar
4 jalapenos (for medium spiced salsa keep 2 with seeds and ribs, the other two remove all ribs and seeds- diced)
1 whole lime, juice of
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
4 tablespoons fresh cilantro (or desired amount- i used about 10 pieces of fresh- riped into tiny pieces, so im guessing that is a)
1 teaspoon cayenne
1 -3 teaspoon hot sauce (I use Sriricha- to taste)

Steps:

  • Mix all ingredients in a large pot- cook until desired thickness and onions have lost some of their color and become slightly translucent.
  • I also took a potato masher and slightly mashed the salsa to keep it chunky yet add some smoothness to it as well.
  • Ladle into jars and viola -- peach salsa bliss (let stand for 15 min, place lids on and put into refrigerator).
  • Keep refrigerated after opening.

3-4 peaches, peeled and cut into small bite size pieces
2-3 Roma tomatoes, diced
1/2 cup white or purple onion, diced
1-2 jalapeños, seeded and diced
juice of one lime
1/2 bunch cilantro, about 1/4 cup diced
dash of salt, optional, to taste

Steps:

  • Peel and dice the peaches. Prepare all other ingredients. Toss to combine, making sure lime juice is distributed evenly. If your peaches are particularly juicy, you can toss them with one tablespoon sugar and the lime juice and let them sit while preparing the rest of the ingredients. The sugar helps release the juice, and the lime prevents untimely browning of the fruit. Before you toss them in with everything else, just strain the liquid. Serve immediately with chips, or however, you plan to enjoy it. Leftovers can be stored covered in the fridge for two days, or until the peaches turn brown and soft.

We had an overabundance of peaches this year so I tried a couple of different salsa recipes and came up with my own version....posting for safe keeping. My peaches were sweet and very ripe, so depending on your ingredients, taste this as you go and modify it for heat and sweetness. I started out adding 1/4 cup sugar at a time until it was what I liked. Same with jalapenos. Adjust to your personal taste. After figuring out that we liked salsa sweet and hot, we have four batches and worried how we are going to make it this winter!
