3 tablespoons cooking sherry
¾ cup butter, softened
¼ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon ground mace

Tips:

  • Choose fresh, high-quality liver. This will ensure that your pâté is flavorful and delicious.
  • Soak the liver in milk for 30 minutes before cooking. This will help to remove any impurities and make the liver more tender.
  • Cook the liver over medium heat until it is just cooked through. Overcooking the liver will make it tough and dry.
  • Let the liver cool completely before processing it. This will help to prevent the pâté from becoming grainy.
  • Use a food processor or blender to purée the liver until it is smooth. You can also use a mortar and pestle, but this will take longer.
  • Season the pâté to taste with salt, pepper, and other desired spices. You can also add herbs, such as parsley, thyme, or rosemary.
  • Serve the pâté immediately or store it in the refrigerator for up to 3 days. You can also freeze the pâté for up to 3 months.

Conclusion:

Making liver pâté is a great way to use up leftover liver and create a delicious and versatile spread. With a few simple ingredients and a little bit of time, you can create a pâté that is perfect for serving on crackers, bread, or vegetables. So next time you have some leftover liver, don't throw it away - make liver pâté instead!
