Pork tenderloin and baking potatoes prepared with green or red bell peppers and fajita seasoning mix spark this pork roast of tenderloin with zesty Mexican flavors. From the Ortega website, this is one of my favorites. To make it even easier, I actually cook it in the crock pot instead of the oven. Turns out moist and flavorful!

Tips:
- Choose the right cut of pork tenderloin: Look for a tenderloin that is about 1 pound in weight and has a uniform thickness. This will ensure that it cooks evenly.
- Season the pork tenderloin generously: Pork tenderloin is a lean cut of meat, so it needs to be seasoned well to prevent it from drying out. Use a combination of salt, pepper, garlic powder, and onion powder.
- Sear the pork tenderloin over high heat: This will create a nice crust on the outside of the meat and help to lock in the juices.
- Reduce the heat and cook the pork tenderloin until it is done: The internal temperature of the pork tenderloin should reach 145 degrees Fahrenheit. Use a meat thermometer to ensure that it is cooked properly.
- Let the pork tenderloin rest before slicing: This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
- Serve the pork tenderloin with your favorite vegetables: Roasted vegetables, grilled vegetables, or a simple salad are all great options.
Conclusion:
Pork tenderloin is a versatile and delicious cut of meat that can be cooked in a variety of ways. The skillet method is a quick and easy way to cook pork tenderloin, and it results in a tender and juicy dish.
