8 oz cremini mushrooms, quartered
1 medium zucchini, chopped
1 tablespoon olive oil
1 garlic clove, finely chopped
1 tablespoon lemon juice
Salt and pepper to taste
1 teaspoon grated lemon peel

Steps:

  • In 10- to 12-inch skillet, melt 1 tablespoon of the butter and the olive oil over medium-high heat. Add mushrooms; cook about 5 minutes, tossing occasionally, until golden brown.
  • Add zucchini; cook, stirring occasionally, about 3 minutes, until lightly browned. Add garlic; cook 1 minute longer.
  • Remove skillet from heat. Stir in lemon juice and remaining 1 tablespoon butter. Season with salt and pepper. Sprinkle lemon peel over top.

2 tablespoons olive oil
1 1/2 tablespoons butter
3 -4 zucchini, washed, ends trimmed, and cut in half
1/4 teaspoon salt
1 teaspoon pepper
1/3 cup flour
2 tablespoons soy sauce
1 tablespoon lemon juice

Steps:

  • In a large skillet, heat the butter and oil over medium heat.
  • Cut each zucchini half lengthwise into 4 pieces.
  • Season the flour with salt & pepper, then coat with the zucchini with flour.
  • Sauté zucchini in oil and butter until cooked through but not mushy, turning to brown on all sides (5-10 minutes).
  • When done, turn heat to low, and add soy sauce and lemon juice.
  • Serve promptly.

1 small butternut squash - peeled, seeded, and cut into 1/2-inch cubes
¼ cup olive oil, divided
kosher salt and freshly ground black pepper to taste
2 large zucchini, ends cut and spiralized
1 clove garlic, minced, or to taste
1 teaspoon Italian seasoning, or more to taste
½ teaspoon red pepper flakes
1 ½ teaspoons lemon juice, or to taste
⅓ cup finely grated Parmigiano-Reggiano cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Arrange butternut squash into a single layer over the prepared pan. Drizzle with 2 tablespoons olive oil and season with salt and pepper.
  • Bake squash in the preheated oven, turning halfway, until browned and softened, about 35 minutes.

1/2 cup (1 stick) unsalted butter
4 pounds button mushrooms, halved vertically
1 cup dry white wine
2 tablespoons fresh lemon juice
1/4 teaspoon ground nutmeg
2 cups whipping cream
Chopped fresh parsley

Steps:

  • Melt 1/4 cup butter in heavy large skillet over high heat. Add half of mushrooms and sauté until brown and beginning to release juices, about 10 minutes. Add 1/2 cup wine, 1 tablespoon lemon juice and 1/8 teaspoon nutmeg. Boil until slightly reduced, stirring occasionally, about 5 minutes.
