CORN ZUCCHINI CASSEROLE

Corn Zucchini Casserole image

This is different than most of the corn casseroles posted here because it uses minimal butter, doesnt' have cream of soups, and is all about the flavor of the vegetable. I often add ham and serve with a side of bread for a meal in and of itself. The ham is listed as option for this reason. It can easily be omitted and serve as a wonderful side dish.

Categories     Vegetable     Side     Bake     Vegan

Yield 1 casserole

Number Of Ingredients 11

3 cups zucchini, 1/2" dice
1 T EVOO
2 cups fresh corn
1 small onion, chopped
1 small red or green pepper, chopped
2 eggs, lightly beaten
1/2 t salt
1/2 t pepper
1 t dried oregano
1 cup swiss cheese, shredded
1 cup seasoned breadcrumbs

Steps:

  • Cook zucchini in 1/2 cup water until tender. Drain and set aside. Heat oil in saute pan. Add corn, onion and green pepper. Saute until tender but not brown. Add to zucchini Add salt, pepper, oregano and cheese. Stir in beaten egg. Transfer to a buttered casserole dish. Sprinkle breadcrumbs on top. Bake in 350 degree oven until knife in center comes out clean, appx 45 mins. Let set 15 mins before serving.

Tips:

  • Choose fresh, tender zucchini. Look for zucchini that is firm to the touch and has no blemishes. The smaller the zucchini, the more tender it will be.
  • Grate the zucchini coarsely. This will help it to cook evenly and absorb the flavors of the other ingredients.
  • Use fresh corn kernels. If you don't have fresh corn, you can use frozen or canned corn, but fresh corn will give the casserole the best flavor.
  • Don't overcook the casserole. The zucchini and corn should be tender, but still have a little bit of a bite to them.
  • Serve the casserole hot or warm. It can be served as a main dish or a side dish.

Conclusion:

Zucchini corn casserole is a delicious and easy-to-make dish that is perfect for summer gatherings. It is a great way to use up fresh zucchini and corn, and it is always a hit with kids and adults alike.
