1 ½ pounds zucchini, halved
1 ½ cups dry bread crumbs
2 ounces shredded Cheddar cheese
¼ cup minced onion
2 tablespoons chopped fresh parsley
1 ¼ teaspoons salt
¼ cup grated Parmesan cheese, divided
2 eggs, beaten
2 tablespoons butter, diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add zucchini and cook until tender, about 15 minutes; drain. Scoop out the flesh of the zucchini, making a 'boat'.

2 medium onions
1 medium zucchini, chopped
1/2 teaspoon olive oil
1 garlic clove, minced
1/2 teaspoon dried basil
1 tablespoon seasoned bread crumbs
1 tablespoon grated Parmesan cheese

Steps:

  • Peel onions and cut a 1/4-in. slice from the top and bottom. Wrap onions in foil. Bake at 375° for 50 minutes or until tender. Cool slightly. 1/2 cup onion, chopped
1/4 cup olive oil
1/2 cup fresh mushrooms, coarsely chopped
1 garlic clove, minced
1 (3 ounce) package cream cheese
1 egg, beaten
1/2 cup parmesan cheese
3/4 cup fresh parsley, chopped

6 medium yellow onions (about 2 pounds)
2 bacon strips, cut into 1-inch pieces
1/4 cup dry bread crumbs
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley flakes
1 tablespoon butter
1-1/2 cups sliced fresh mushrooms
1/4 teaspoon salt
Dash each pepper and ground nutmeg
1/2 cup beef broth
Additional parsley, optional

Steps:

  • Preheat oven to 375°. In a Dutch oven, bring a small amount of water to a boil. Peel onions; using a slotted spoon, place onions in boiling water. 3 tablespoons butter
2 large onions, diced
1/2 pound shiitake or other wild mushrooms, chopped
2 cloves garlic, minced
8 slices white bread, crusts removed, diced (about 4 cups)
2 teaspoons lemon juice
Zest of 1 lemon
2 pinches cayenne
2 teaspoons chopped marjoram
1/4 cup chopped hazelnuts
1/4 cup dry bread crumbs

Steps:

  • Slice the zucchini in half lengthwise and spoon out the flesh, leaving boats about 1/3-inch thick. Sprinkle the boats with salt and place upside down on paper towels to drain for 30 minutes. Dice the flesh and set it aside.
  • Meanwhile, preheat the oven to 400 degrees. Melt 2 tablespoons of the butter over medium heat. My mother-in-law's garden was popping out zucchinis the size of newborn babies... one night I concocted this in an attempt to use up one we had in our fridge, and it's now a household favorite! This is very versitile, but different from many of the other "stuffed zucchini" recipes I've seen because it contains NO tomatoes or tomato sauce. You can also easily leave out the bacon to make this vegetarian. This would be a good "clean out your fridge" recipe as you can add/ substract anything you want!

1 gigantic zucchini (may use multiple smaller ones)
1/2 tablespoon butter
1/2 tablespoon olive oil
1 head broccoli, cut into small florets
mixed mushrooms, 1 avg. package, sliced
1 red bell pepper, diced
1 medium onion, diced
6 slices bacon, cooked and crumbled
3/4 cup low-fat cheddar cheese, shredded
1 tablespoon garlic, minced
salt and pepper
1 pinch cayenne pepper
1/2 teaspoon cumin

Steps:

  • Preheat oven to 375 degrees.
  • Cut zucchini lengthwise, and using a spoon, scoop out the seeds; discard.
  • Continue scooping out flesh (save this and dice) until you have a zucchini boat (about 1/2 inch thick; don't scoop too thin or your zucchini will turn to complete mush).
