CANNELLONI WITH SPINACH, RAISINS AND PINE NUTS

Cannelloni With Spinach, Raisins and Pine Nuts image

From The New Spanish Table. According to the author, though cannelloni may have their origins in Italy, they have become something of a Catalan national dish. Rather than ricotta fillings and tomato-based sauces, Catalon cannelloni dishes can be filled with fish, ground meat or spinach. No-boil lasagna noodles can be used in place of cannelloni squares. I love the raisins in this, but they're the only thing my son doesn't like about it, so go with your own best judgments about family preferences.

ZUCCHINI WITH RAISINS AND PINE NUTS

Zucchini with Raisins and Pine Nuts image

Provided by Elisabeth Rozin

Categories     Side     Sauté     High Fiber     Raisin     Pine Nut     Zucchini     Summer     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Soy Free     No Sugar Added     Kosher

Yield Serves 4 to 6

Number Of Ingredients 9

2 to 3 tablespoons olive oil
3 large cloves garlic, very thinly sliced
4 small-to-medium zucchini, trimmed and cut into slices about 3/8 inch thick
2 medium tomatoes, coarsely chopped
1 teaspoon anchovy paste
2 tablespoons golden raisins
1 tablespoon red wine vinegar
several good grinds black pepper
1 tablespoon pine nuts, lightly toasted

Steps:

  • Heat the oil in a medium skillet and sauté the garlic over moderate heat, stirring, just until the garlic begins to turn golden and becomes aromatic. Do not allow the garlic to overbrown.
  • Add the sliced zucchini and sauté for a few minutes, stirring.
  • Add the tomatoes, anchovy paste, raisins, and vinegar. Mix well, then cook over moderate heat, stirring occasionally, for about 10 to 12 minutes, until the sauce has thickened and most of the liquid has cooked away.
  • Stir in the black pepper and pine nuts. Serve warm or at room temperature.

### Tips
  • Select tender zucchini: Choose young, small to medium-sized zucchinis as they have fewer seeds and a milder flavor.
  • Prepare the zucchini properly: Wash the zucchinis thoroughly, trim the ends, and cut them into desired shapes or sizes.
  • Use high-quality raisins: Opt for plump, juicy raisins that are free from stalks and debris. Soaking them in warm water for a few minutes before use helps plump them up further.
  • Toast the pine nuts: Toasting pine nuts enhances their flavor and adds a nutty aroma to the dish. Toast them in a pan over medium heat until golden brown, stirring frequently.
  • Add some herbs and spices: Enhance the flavor of the dish by adding herbs like basil, oregano, or thyme, and spices like garlic powder, onion powder, or paprika.
  • Don't overcook the zucchini: Zucchini cooks quickly, so be careful not to overcook it. Overcooked zucchini becomes mushy and loses its鮮豔的顏色.
### Conclusion Zucchini with raisins and pine nuts is a versatile dish that can be enjoyed as a side dish, appetizer, or even as a main course. It is a great way to use up zucchini from your garden or local market. With its simple ingredients and quick cooking time, this dish is sure to be a hit with your family and friends.
