Bluebarb Pie image

Yep! you guessed it a mix of rhubarb and blueberries, in this pie recipe.. blueberries are plentiful now here in Belleview, Florida at the blueberry farms...

Number Of Ingredients 7

pie crust top and bottom
4 c rhubarb, fresh or frozen sliced
2 c blueberries, fresh or frozen
1 1/2 c sugar
3 Tbsp quick cooking tapioca
1/4 tsp salt
1 Tbsp butter

Steps:

  • 1. In a large bowl combine the sugar, tapioca, and salt. Add rhubarb and blueberries, toss to coat. Let stand 15 minutes. Transfer to crust and dot with butter.
  • 2. Top with upper crust, and cut slits to vent. Brush with milk and sprinkle with sugar.
  • 3. Cover pie edge with foil, Bake at 400* for 40-45 minutes, remove foil during last 15 minutes of baking time. Cool on a wire rack..Enjoy!

This pie was a disaster. The crust was soggy and the filling was bland. I followed the recipe exactly, so I'm not sure what went wrong. Maybe I just got a bad batch of rhubarb.
