1/2 large onion, chopped
1 cup sliced fresh mushrooms
1 tablespoon olive oil
1 cup brown rice
2 cups chicken broth
salt and pepper

Steps:

  • Brown chopped onion and sliced mushrooms in a large saucepan with the olive oil, about 5 minutes.
  • Add brown rice and stir to coat in oil.
  • Add chicken broth.
  • Bring to a boil, then simmer for about 45 minutes or until all liquid is absorbed.

This recipe was a bit bland for my taste. I think it could have used more herbs and spices. However, the rice was cooked perfectly and the mushrooms were delicious.

I made this recipe last night and it turned out great! The only change I made was to use white rice instead of brown rice. The pilaf was very flavorful and the mushrooms were perfectly cooked. I will definitely be making this again.
