Number Of Ingredients 8

1/3 c shortening
3/4 c white sugar
1 egg
1 1/2 tsp vanilla
1 3/4 c self rising flour
3/4 c milk
1/2 c blueberries (optional)
if you do use the berries, add another 1-2 tbsp milk

Steps:

  • 1. Preheat oven to 375 degrees. Place shortening in a mixing bowl and add sugar, egg and vanilla, mix until moistened.
  • 2. Gradually add flour and milk at the same time. If desired, add the extra milk and blueberries as well. Mix until well incorporated.
  • 3. Bake in a greased 9x9x2 baking pan for about 25 minutes.
  • 4. This cake is yummy on its own. We would typically have it with whipped cream and berries.
  • 5. If you do not have self rising flour, you can make your own, just sift together flour with 1 tsp baking powder per 1 cup of flour.
