CALIFORNIA COLE SLAW image

1 small head cabbage, shredded
1 small white onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small carrot, shredded
1/2 cup cider vinegar
3 tablespoons white sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground
black pepper
1/2 cup vegetable oil

Steps:

  • In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper and carrot. Mix the vinegar, sugar, salt, pepper and vegetable oil in the bowl or lg measuring cup. Pour over the vegetables. Toss the mixture until the vegetables are fully coated with the marinade

This recipe is a great starting point for making your own coleslaw. I like to add a bit of extra mayonnaise and mustard to the dressing, and I also like to add some chopped celery and green bell pepper for extra crunch. It's always a hit at potlucks

I thought this recipe was just okay. The dressing was a bit too sweet for my taste, and the cabbage and carrots were a bit bland. I think I'll try a different recipe next time.
