Caramelized Vegetable and Polenta Cake image

I love polenta (and caramelized vegetables), so this recipe really appeals to me. Prep time doesn't include the cooking, cooling and peeling of the capsicums!

This cake was okay, but I wasn't blown away. The caramelized vegetables were a bit too sweet for my taste and the polenta was a bit bland. I think I'll try a different recipe next time.

I made this cake for a potluck and it was a huge hit! Everyone loved the combination of caramelized vegetables and polenta. It was also very easy to make, which was a bonus.

This cake was a bit too sweet for my taste, but I think that's because I used a sweeter variety of carrots. I'll try it again with a less sweet carrot and see if that makes a difference.

I've made this cake twice now and it's been a success both times. The vegetables caramelize beautifully and the polenta is creamy and flavorful. I also love that it's a vegetarian dish that's still packed with flavor.

This polenta cake was a hit! The caramelized vegetables added a delicious sweetness and depth of flavor, and the polenta was cooked perfectly. It was also very easy to make, which is always a bonus.
