Carrot and Bell Pepper Slaw image

Number Of Ingredients 7

2 tablespoons plain yogurt
2 tablespoons mayonnaise
1 teaspoon Dijon-style mustard
1 teaspoon fresh lemon juice
1 cup coarsely grated carrot
1 red bell pepper, cut into 1-inch julienne strips
1 scallion, chopped fine

Steps:

  • In a bowl whisk together the yogurt, the mayonnaise, the mustard, and the lemon juice, add the carrot, the bell pepper, and the scallion, and toss the slaw until it is combined well. Season with slaw with salt and pepper.
