Yield 4 people

Number Of Ingredients 8

1 head cauliflower cut into 1 inch. florets
2 carrots
4 dried mushrooms (can substitute it with fresh mushroom)
1 T oil
1 cup chicken broth
1 cup water
1/2 t salt
dash of black pepper

Steps:

  • 1. Soak dried mushroom for at least 2 hour or until the stem becomes soft and can be removed. Cut the mushroom into thin slices. 2. Cut the carrots diagonally into chunky pieces. 3. Heat oil, stir fry dried mushroom until color become light brown. Add cauliflower, carrot, chicken broth, water and salt, stir for a while, then cover and simmer. 4. Stir couple of times and adjust the cooking time (about 5 minutes) based on the softness of the cauliflower that you prefer. If fresh mushroom is used instead of dried mushroom, it can be added when cauliflower is almost ready. It doesn't need to be cooked long. Add black pepper, mix well and serve.

The cauliflower was a bit tough. I think I'll try roasting it for a shorter amount of time next time.
