CHICKEN TAGINE WITH DRIED FRUITS image

Number Of Ingredients 18

1 tbsp olive oil
1 pound chicken (breast or thigh) cut into 2 in
Ch chunks
1 cup chopped onion
1 Tsp grated grinder
3 garlic cloves minced
1 tsp turmeric
1 tsp cumin
1/4 tsp fennel seeds
1/4 tsp cinnamon
1/2 cup dried apricots, halved
1/2 cup dried plums, halved
1/2 tsp salt
20 kalamata olives, pitted and halved
1 14 oz. can chicken broth
3 tbsp chopped fresh cilantro
1/2 tsp grated lemon rind
3 cups cooked couscous

Steps:

  • Heat oil in Dutch oven over medium heat: sautéed chicken till brown on all sides. Place chicken aside on plate. Add onion Ko pan. Sautéed 4 mins. Until golden. Add ginger and garlic, sautéed for 30 secs. Stir in turmeric, cumin fennel seeds and cinnamon, sautéed 15 secs. Add chicken, apricots, plums, salt, olives and broth.. Bring to boil. Cover and reduce to simmer. Cook for 45-60 mins. Stir in lemon rind befor serving. Garnish with cilantro. Add pomegranate seeds if you like. They also go well in the couscous.

This tagine is so easy to make and it always turns out great. I love that I can throw everything in the pot and let it cook on its own. The chicken always comes out so tender and juicy.
