This is a very simple to make, light and refreshing dessert. It's great for summer suppers with friends or for your family, especially if you want a change from the heavier cakes and pies. It tastes kind of like an orange creamsicle, remember those? Enjoy!

Steps:
- 1. In a small bowl, mix the Jello with the boiling water, stirring until completely dissolved, about 2 minutes. Pour into a blender or food processor.
- 2. Add remaining ingredients except for the pineapple and blend on high until thoroughly mixed. Stir in pineapple.
- 3. Pour into a Jello mold or an 8 X 8 dish and chill thoroughly until set. Cut into serving size pieces and serve or spoon into a dessert bowl with a dollop of whipped topping.
