Cornmeal Mustard Fried Catfish image

Nice flavor and a crunchy crust.

4 catfish filets
1/2 c prepared mustard
2/3 c cornmeal
1/2 c flour
1 tsp salt
1/2 tsp paprika
1/8 tsp black pepper
oil for frying

Steps:

  • 1. Mix the cornmeal, flour, salt, paprika, and black pepper in a shallow bowl.
  • 2. Spread the mustard over the fillets. Dredge in the cornmeal mixture.
  • 3. Heat oil to 350 degrees. Fry fish totally covered by oil for about five minutes.
