Cranberries are an important crop in New England. This recipe produces a beautiful and delicious cake. Love coffee cake with my coffee in the morning. Number Of Ingredients 15

1/3 c chopped walnuts (or almonds)
1/2 c butter or margarine, softened
1 c sugar
2 eggs
1 tsp almond extract
2 c all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 Tbsp salt
1 c sour cream
1 can(s) 16 oz whole cranberry sauce ~divided
GLAZE:
3/4 c confectioner's sugar
2 Tbsp milk
1/2 tsp pure vanilla extract

Steps:

  • 1. Sprinkle walnuts (or almonds) into a greased 10" fluted pan. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Stir in almond extract.
  • 2. Combine the dry ingredients, add to creamed mixture alternately with sour cream. Spread half the batter over walnuts. Top with half of the cranberry sauce. Reapeat layers.
  • 3. Bake 350 degrees F for 50-55 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  • 4. Glaze: In a small bowl, combint glaze ingredients until smooth, drizzle over cake.
