Yield 4-5 dozen

Number Of Ingredients 6

2 C granulated sugar
1 C brown sugar
1 stick melted salted butter
1 C heavy cream
2 Tbsp. light Karo syrup
4 C chopped pecan pieces

Steps:

  • Mix all ingredients [except pecans] in a large bowl and put into microwave oven. Cook on high for 5 minutes. Stir. Continue to cook and stir at 5 minute intervals till mixture comes to a rolling boil. Add Pecans. Continue to cook and stir at 5 minute intervals until mixture comes to a soft-ball stage when dropped in cold water. Mixture will look grainy around edges of bowl. Remove and drop by heaping teaspoons onto waxed paper. Work from the outer edge of bowl as you drop pralines onto waxed paper. Candy in center of bowl will continue to cook as you work, so work fast. Candy should set up in 1-2 hours.

I'm allergic to pecans, so I substituted walnuts in this recipe. They turned out great!

These pralines are a bit too expensive for my taste. I think I'll try a different recipe next time.

I'm not sure what I did wrong, but my pralines turned out really dry. I think I might have overcooked them.

I love the flavor of these pralines, but they're a bit too hard for my liking. I think I'll try cooking them for a shorter amount of time next time.
