I was skeptical about using dandelion greens in pesto, but I'm so glad I tried it! The flavor is earthy and complex, with a hint of bitterness that is perfectly balanced by the other ingredients.

This dandelion pesto is a delightful twist on the classic basil pesto. The dandelion greens add a slightly bitter flavor that pairs perfectly with the nutty Parmesan cheese and creamy pine nuts. I used it to top grilled chicken and it was a hit!
