Yield 4 dozen

Number Of Ingredients 13

DOUGH:
1 cup shortening
2 cups brown sugar
3 eggs, well beaten
1/2 teaspoon salt
1/2 teaspoon baking soda
3 1/2 cups flour
1 teaspoon vanilla
FILLING:
2 1/2 cups chopped dates
1 cup white sugar
1 cup water
1 cup nut meats

Steps:

  • DOUGH: Cream butter and sugar together. Blend in eggs, then add the dry ingredients. Refrigerate for 1 hour. Divide into 2 parts. Roll each portion into a 1/4" thick rectangle. FILLING: Cook all ingredients together, adding nuts last. Cool, then spread on dough. Roll in jelly roll fashion. Refrigerate rolls for 2 hours, then slice and bake on a greased pan. Allow cookies to cool for a few minutes, then remove them before they harden and stick to the pan.
