Very easy and tasty. To reduce carbs, rinse English peas with cold water and replace butter crackers with a sleeve of saltines. Can also add a small can of drained mushrooms for more flavor.

- 1. Preheat oven to 350 degrees. Mix peas, pimientos, and celery soup.
- 2. Pour mixture into greased 1 1/2 qt. casserole dish, cover with cheese.
- 3. Mix melted butter and crushed crackers. Spread over top.
- 4. Bake until bubbly. About 30 minutes
