Steps:
- 1. Cook potatoes according to package directions; drain well.
- 2. Combine potatoes, eggs, ham, 1 cup tomato, 3/4 cup bell pepper, and onion in a large bowl; stir well.
- 3. Pour mixture into a lightly greased 13- by 9- by 2-inch baking dish.
- 4. Bake, uncovered, at 325F for 40 minutes.
- 5. Top with remaining 1/4 cup tomato and 1/4 cup bell pepper.
- 6. Sprinkle evenly with cheese.
- 7. Bake an additional 5 minutes or until cheese melts.
