I found this recipe in Gourmet magazine. I have not tried this recipe, but I'm posting it for safe keeping.

1/2 cup vegetable oil
1/4 cup lime juice
1/2 teaspoon Tabasco sauce
1/2 cup red wine
1 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon dried marjoram
1/8 teaspoon dried thyme
4 steaks (1 pound each)

Steps:

  • Combine oil, lime juice, and Tabasco pepper sauce in a shallow, non-aluminum dish. Stir in wine, dry mustard, salt, and herbs.
  • Let steaks stand in marinade for five hours, turning once.
