Steps:
- 1. Pre-heat oven to 350f.
- 2. Grate complete rind of lemon, set aside.
- 3. Squeeze juice from lemon, set aside.
- 4. Peel and core apples. Slice them into 1/2 inch thick wedges. (Place slices into lemon juice, to save their color, if preferred)
- 5. Separate the egg whites from yolks.
- 6. Cream vanilla, butter and sugar.
- 7. Add egg yolks to butter and sugar, mix well.
- 8. Add flour and baking powder, mix well.
- 9. Add lemon juice and grated rind, mix well.
- 10. In separate bowl, beat egg whites until VERY stiff.
- 11. Fold egg whites GENTLY and lovingly into batter with a wooden spoon.
- 12. Pour into greased 8" cake tin.
- 13. Place apple slices on top of batter in slightly overlapping, concentric rings from the outside in. (You might have slices left over. Eat them and enjoy!)
- 14. Sprinkle raisins, cinnamon and almond (or walnut) pieces on top (in amounts that suit your taste).
- 15. Bake for 30 minutes. I find the exact amount of time seems to change with each cake, so do the butter knife test at 30 minutes, cook a bit longer if knife blade doesn't come out clean from the center.
- 16. As soon as knife blade comes out clean from the center of the cake, it's done!
- 17. As soon as cake cools, sift powdered sugar on top if desired for an extra touch of sweetness!
