Fruit & Nut Hawaiian Chicken Salad image

This is a terrific, sweet chicken salad with a Hawaiian flair. Great way to use up leftover chicken or turkey.

2 cups chopped cooked chicken or 2 cups cooked turkey
1/2 cup coconut
1/4 cup chopped nuts
1/2 cup crushed pineapple, drained
3/4 cup mayonnaise

Steps:

  • Combine all ingredients; blend well.
  • Chill.

The chicken was a bit dry in this salad. I think I'll try poaching the chicken next time instead of grilling it.
