Fruited Turkey Salad image

I found this in a lowfat, healthy booklet. not tried it yet, but sounds yummy and will be good at this summer's bbq's

3 c tricolor rotelle
1 1/2 c cooked, cubed turkey breast
1 c cantalope cubes
1 c seedless grapes
1/2 c drained crushed pineapple
2 Tbsp raisins
TOPPING
1 c non fat yogurt
1 Tbsp honey
1 Tbsp red wine vinegar
1/4 c fresh mint
1/4 c fresh parsley, minced
2 Tbsp unsalted sunflower kernals, for garnish

Steps:

  • 1. cook, boil rotelle 10 minutes. drain and rinse.cool and place in large bowl.
  • 2. add meat and fruit, mix well
  • 3. mix topping ingredients in a small bowl, except for the herbs. stir those in after topping is well blended
  • 4. toss all together and serve over a bed of your favorite lettuce, topping with a sprinkle od the sunflower kernals
  • 5. calories : 344 3.7 grams fat 2.2 grams fiber 25 mg cholesterol 64 mg. sodium
