Ginger Snaps image

Yield 3 dozen

Number Of Ingredients 10

3/4 cup butter, unsalted and softened
1 cup light brown sugar
1/4 cup molasses
1 egg
2 1/4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon ground cloves

Steps:

  • Cream together the butter and sugar. Stir in molasses and egg. Add 1 cup of flour, baking soda, salt, cinnamon, ginger and ground cloves and stir to combine. Add remaining flour 1 cup at a time. Chill dough in freezer for 15 minutes. Shape dough into 1-inch balls and roll in sugar. Bake on greased cookie sheet at 375 degrees for 10 minutes.

I'm not a huge fan of ginger, but these cookies were surprisingly good! The ginger flavor was not overpowering, and the cookies were soft and chewy.

Very easy to make and taste delicious! I added a bit of extra ginger because I like a strong ginger flavor. These will definitely be a regular in my cookie jar!
