This is a take off on the famous Ham n Goody's lemon tea cookies from their bakery and sandwich shop in Knoxville Tennessee. I make a couple of changes to add even more lemon flavor and use palm sugar to reduce the impact of the glycemic load. Number Of Ingredients 10

COOKIES
3 c all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 c butter, unsalted, softened
1 c white or palm sugar, your choice
2 large juiced lemons, use pulp and grated peel
GLAZE
1 1/4 c confectioners sugar
1 large juiced lemon, with pulp and grated peel

Steps:

  • 1. Sift flour, baking powder and baking soda into bowl. Beat butter, sugar, lemon juice, lemon, pulp, and grated lemon peel, add dry ingredients And mix until combined.
  • 2. Roll into 2 10 inch logs and wrap in plastic wrap, freeze for at least 1 hour. (You can make ahead and freeze for weeks until needed).
  • 3. Preheat oven to 400 degrees. Remove dough from freezer, unwrap and cut into 1/4 inch thicknesses
  • 4. Place on silicone baking mat and place in oven for 7-9 min
  • 5. Remove and let cool on rack.
  • 6. Mix powdered sugar, lemon juice, pulp and grated peel, pour into shallow bowl or plate.
  • 7. After cookies have cooled, invert one at a time and dip into glaze, set aside to set. ENJOY!!!!!
