Herb-Crumbed Broiled Tomatoes image

Number Of Ingredients 8

1 1/2 teaspoons olive oil
2 large cloves garlic, peeled and minced
1/2 cup bread crumbs
2 tablespoons chopped Italian parsley
2 teaspoons chopped fresh thyme
1/2 teaspoon kosher salt
Freshly ground pepper to taste
4 medium tomatoes, ripe but firm, cut in half crosswise, seeds scooped out

Steps:

  • Preheat the broiler. Heat the olive oil in a medium-size nonstick skillet. Add the garlic and cook, stirring constantly, for 30 seconds. Stir in the bread crumbs and remove from heat. Stir in the parsley, thyme, salt and pepper. Place the tomatoes on a baking sheet and sprinkle heavily with the crumbs. Broil just until the crumbs are lightly browned. Serve immediately.
