This is a quick, easy and tasty chicken entree. I use bone-in chicken breasts, I find them juicier than boneless chicken when grilling. If you find blue cheese too strong, try Boursin cheese. Also try to use the best balsamic vinegar you can find, it makes a difference. We love it with fresh sliced tomatoes and an arugula or spinach salad, they complement the flavors of the chicken just right. Prep time does not include marinade time. - Place chicken in large resealable plastic bag.
- Whisk vinegar, 3 tablespoons oil, 1 1/2 teaspoons coarse salt, 1 teaspoon herbes de Provence and 1 teaspoon pepper in small bowl.
- Add to chicken; seal bag. Chill 2 to 3 hours, turning bag occasionally.
- Prepare barbecue (medium-high heat).
- Sprinkle chicken with 1 teaspoon herbes de Provence, 1/2 teaspoon coarse salt, and 1/2 teaspoon pepper.
- Brush grill rack generously with oil.
- Grill chicken until cooked through, about 7 minutes per side.
- Transfer to plates; top each with slice of cheese.
