Honey Carrots With a Hint of Ginger image

Baby carrots are simmered in a buttery ginger sauce sweetened with honey. A great accompaniment to a chicken dinner.

1 ¼ cups butter
¾ cup honey
1 teaspoon ground ginger
⅓ cup lemon juice
2 pounds baby carrots

Steps:

  • Combine the butter, honey, ginger and lemon juice in a large pot. Bring to a boil over medium-high heat. Add carrots and reduce heat to medium. Cover and simmer for about 10 minutes, or until carrots are tender. Simmer longer if you desire more tender carrots.

This recipe has potential but needs some tweaking. The carrots were a bit too crunchy for my liking and the glaze was too sweet. I think I'll try it again with less honey and maybe add some orange zest.
