Huevos Mexicanos image

An exciting Mexican-style scramble with lots of veggies and tortilla strips mixed right in! Serve with salsa on the side if desired.

4 eggs
1 small tomato, diced
½ small onion, chopped
½ green bell pepper, chopped
1 jalapeno pepper, seeded and diced
2 tablespoons butter
2 (6 inch) corn tortillas, cut into strips
½ cup shredded Cheddar cheese

Steps:

  • In a large bowl, lightly beat eggs. Stir in chopped tomato, onion, green pepper and jalapeno.
  • In a large skillet, melt butter over medium heat. Toss in the tortilla strips and cook briefly until soft. Add the egg and vegetable mixture and stir to combine. Cook, stirring occasionally, until eggs are set. Sprinkle with cheese and serve hot.
